A 50/50 blend of barrel aged Gold with fresh Gold that has just completed primary fermentation. This composition of aged and fresh beer is what we had originally intended for our Gold. It didn't end up like that though, as Gold is 100% barrel aged.
We love the fresh fermentation esters and bright hop character we get in our young fermentations. This is what we focus on in beers like The International & As It Were (coming in November). But we can't hide that we also love the apparent funk, creamy mouthfeel and complex fermentation flavours of aged beer. We dont think of this blend as being a best of both worlds, but more an attempt (and this is only the first one) to marry these flavours harmoniously. One of the beers that really got me thinking about making mixed culture beers at all was BFM √225. It was the first biere de coupage I tasted and still remains a little bit of a mountain for me. Good as Gold may be made in the same fashion as and with a lot of inspiration from √225 but has a distinctively Wildflower feel.

On tap at Port Street Beer House, pours a hazy bright golden with a small white head. Aroma is very buggy, with plenty of oak, and lightly tart citrus. Flavour is buggy upfront, with oak, wild yeast and subtle tartness. Oaky, buggy; certainly nice but certainly not a gueuze.

Clear bright blond beer, small creamy off-whtie head, stable, non adhesive. Aroma: yeasty, some banana, very rural, cow fodder, grains, very funky, juicy, tropical fruits. MF: ok carbon, medium body. Taste: quite some citrus notes, banana, yeasty, meh. Aftertaste: more citrus, bit grassy, bitter.

75cl Bottle. Blend #12. Split with the Blueberry boys, Crazy Joe Davola and SirAlex. Pours hazy deep Golden orange with a White head. Funk, brett and lemon peel. White Wine. Dry and slightly tart. Dope. Really tasty.

Bottle, blend 7. Pale gold with a white head. 3+ Aroma of crackery dough, Meyer lemon, other subtle fruity and funky notes - lime, mango, damp hay. Dryish and moderately tart with a little zing and astringency along with oak at the end. Elegant and rewarding.

On tap @Luppolo Station (Rome). Gialla acida, mediamente torbida, schiuma bianca medio-leggera. Al naso note di bretta, frutta gialla, citrico, fieno, stalla. In bocca è morbida, dolce all'attacco con chiusura acidula. Corpo leggero, carbonazione medio-leggera. Nonostante una piacevole eleganza, le manca spunto.

medium golden color. Fairly big frothy head. Beautiful oaky nose with brett and funky yeasty character, cobwebs creep in there. Soft mouth feel, low carbonation but fairly tart, lots of oak, Lemon and brett. Citrusy notes in the background. Really really lovely. Has the excellent funkiness but doesn’t get too tart big oak though
