Entre une pils et une bière acide, Hirondelle n'a qu'un but: étancher la soif. Nous avons voulu réunir le meilleur des deux mondes: les arômes délicats d'une fermentation basse et le côté super rafraîchissant d'une fermentation lactique. Nous avons mis en place un procédé assez unique pour produire une bière qui ne ressemble à rien de ce qu'on connaît et on espère que ça vous plaira!

Hazy blond colour, white foam. Light sweet, malty, tart bretty hints, a bit fruity, medium bitter finish.

Presented as a 'sour Pilsener', this one is dedicated to the swallow, the announcer of spring - the ideal beer for a spring weekend like this. Thick and frothy, eggshell-white, membrane-lacing, bit 'fluffy' and stable head on an initially crystal clear, very purely 'metallic' golden blonde beer with fierce, 'champenoise' sparkling everywhere, turning misty with a somewhat khaki tinge after pouring in the sediment. Quite unexpectedly delicate aroma of lemongrass, lemon meringue pie, kefir, bread crumbs, radish peel, white yoghurt, freshly cut Granny Smith apple, sweet-scenting garden flowers somewhere deep in the background. Crisp, 'clear' onset, lots of very minerally carbonation, sharpish but fit for what is intended here, some fruity notes from the malts and lactic fermentation, akin to green apple, crushed green gooseberry and unripe pear; supple, slender body, grainy and thinly bready, with a 'fuller' breadiness towards the finish, mingled with a delicately flowery and 'lemongrassy' hop bitterness, remaining delicate enough not to clash with the lactic sourness that gently stretches through the whole, adding dryness and a crisp, indeed utterly quenching effect. I get the idea of evoking a Bohemian Pilsener here: this is an all-barley sour - no wheat included as is often the case - with a delicate but confident, floral hop character, but of course a Pilsener by definition can never be a sour so this is a somewhat atypical kettle sour to me; more importantly, it is an extremely refreshing, balanced and refined beer, no loud shouting here but rather a galant whispering, original and sophisticated while still accessible. Lovely little beer, a true gem.

33cl can (5%, BBF: 07/12/2021) from Rob the Gourmets’ Market in Brussels. F: big, snow-white, good retention. C: yellow blonde, hazy. A: light lemon water, floral, lactic touch, light sour fruity, bit caramel. T: light to medium malty base, bit citrus, floral, bready, light fruity sour, medium to high carbonation, nice refreshing beer, enjoyed.

Fine white head, not very stable; clear golden beer. Strange perfumey nose, floral, faint lactic acid. Sourish, faintly hoppy-bitterish; again floral/blossomy. Very delicate acidity, nowhere exaggerated, getting lemony in the aftertaste. Sparkling, fine carbonation, however hardly visible. Light body. Nice & original. Thanks to Stef!

Little cloudy blond to yellow beer, big irregular off-white head, stable, bit adhesive, leaving a nice lacing in the glass. Aroma: malty, some banana, spicy, cardamom, bit herbal, funky. MF: ok carbon, medium body. Taste: acidic start, bit metallic, lemony touch, very spicy, more cardamom. Aftertaste: bit dirty, lemony, soft bitterness, metallic, spicy, weird, herbal, bit floral.

Dorée claire, col épais blanc;
Arôme est fruité - cassis et groseille. Léger grain en rétro - pils. Bouquet sympa de levure sauvage - fruité persistant avec un apport pils qui ajoute un côté grains bien délicat. Houblons variés entre noble et noble nouvelle variété qui confère de belles effluves sur le fruité et noble.

Palais est léger, frais avec un aspect léger de brett - et un côté grains concassés de pils; Amertume fine avec un fruité distinct de Hallertau Blanc qui confère un léger côté groseille à maquereau et ponctué par un fleuri oscillant sur le sureau. Retrouve aussi un léger côté terreux.
