The Bruges city beer of old, potent and bitter-sweet BRUGGE Tripel has a beautiful golden-blond colour and a firm, rocky head, leaving a trail of Bruges lace on the glass. The aroma has a typical touch of smoked phenolic, and the flavour is bitter, rich and creamy.

The secret of the BRUGGE Tripel city beer is the unique composition of the “gruut” blend of herbs and spices used to enrich its flavour and aroma. In Bruges, anyone brewing beer was obliged to purchase “gruut” from the city’s herbs and spices shop, known as the “Gruuthuse”. Jan van Brugge and his descendents, who later changed their name to Van Gruuthuse, had a monopoly on the sale of Bruges “gruut” that lasted late into the 16th century. At the same time, taxes were levied to the Count of Flanders. In BRUGGE Tripel, this medieval tradition continues.

330ml bottle received as a present. Pale amber colour, with a foamy head that evaporated quickly. Aroma has some sweetness and fruit. The taste has this too, with a warmth from the high alcohol content.

Bottle courtesy of a friend. Poured a clear straw colour with a frothy white head a few bubbles. The aroma is yeast light sweet malt. The flavour is medium sweet light bitter with a yeast resin alcoholic bitter palate. Medium bodied with average carbonation. A familiar and standard Belgian Tripel.

Successor of the old Brugse Tripel by Gouden Boom, in which Palm uses its own yeast and changed the first part of the name because the word ’Brugge’ looks more familiar to foreign tourists than ’Brugse’ (which simply means ’from Brugues’, obviously). Deeply golden blonde (’old gold’) with thick off-white head; aroma of apple, water melon, hay, pepper, lemon zest, thyme, coriander, bitter honey, white grapes, bread, aniseed; fruity, yeasty and caramelly malty taste with lots of explicit spiciness, drying towards the finish, where except from herbal hoppiness some warming, but not acerb alcohol also manifests itself. Perhaps a bit too straightforward, like most of Palm’s ales nowadays. I have also tasted this under its new alias Brugge Tripel Gruut and frankly, I am not convinced at all that this is really an alias: this version did seem more spicy, coriander and aniseed were clearly more emphatically present and the alcohol content of 8.7% ABV is higher than the old 8.2% ABV of the ’ordinary’ Brugge Tripel... Original review text: The forerunner of Brugge Tripel, to the original recipe, i.e. made with the original Gouden Boom yeast. Tasted this many times some ten years ago, from its own vase-shaped glass. It was a hazy orange blonde beer with thick and moussy, yellowish white head and fruity character, bready, soft and sweetish, caramelly, yeasty with a drying finish of herbal hop bitterness and some warming alcohol. This was quite a decent tripel and in my view better than the current version - or this may just be nostalgia, perhaps.

Clear, pale golden. Large and densen golden head. Sweet and fruity aroma hints of banana and coriander. Similar taste.

Bottle. Clear golden liquid with huge white head. Aroma of bread, clove, flowers, sweet alcohol and vanilla. Taste is dry and light bitter with notes of clove, sweet alcohol and bread. Medium bodied with medium to high carbonation. Pretty nice.

Tap. Clear golden with nice white head. Yeast, light sweet malts with light toasted touch. Some fruits. Slight chemical/metallic bitterness. Medium bodied. Not very good. Update: bottle. Seems more sweet.
