This culinary delight is a rich farmhouse-style saison brewed with a generous helping of aromatic Turkish bay leaves and a dose of coarsely ground Tellicherry black peppercorns. The wild fermentation is finished off with cultured brettanomyces, which lend a noticeable sour note. As a collaboration between celebrated Louisville chef, Josh Lehman, and the brewers at Against the Grain, this beer highlights the interplay of cooking and brewing in a single glass. Complex, yet refreshing, this beer has a wild, perfumey aroma that prepares the palate for the tangy, yeasty flavor that mingles with spiciness from the spices as well as the phenols produced in fermentation.

Hazy orange beer, small cream colour head. Palate is airy and dry, good fine carbonation. Thin malts. Tangy fruits and ripe fruits. Saison herb, quite strong, bay. Fair dose of black pepper but it's very smooth and doesn't burn at all. A little dry seltzer and a slightly bitter finish. Inoffensive but it really wants something else going on, just drinking herbs and pepper gets tiresome quickly.

And so it came to pass that six like minded people met on the 20th day of November in the year of 2016: those six people shared twenty five fine beers. This however was only split five ways: 75cl bottle. Dirty golden pour, weak white head. The nose had a honey lead, some mixed herbs and spices also. The taste was similar yet semi-sour even with that honey like base we all found in our bottle. Strange and interesting.

Bottle @ Rich’s 7k tasting. Pours hazy pale gold, aroma is honey and prominent assorted spice. Taste is strong honey, bretty funk, peppery spice with a fair sweetness. Decent spicy saison.

750 ml bottle into tulip glass; no bottle dating, but likely from 2015. Pours hazy deep golden yellow color with a 1-2 finger fairly dense white head with good retention, that reduces to a small cap that lingers. Light spotty soapy lacing clings around the glass, with a fair amount of streaming carbonation retaining the cap. Aromas of big lemon, orange peel, apricot, pineapple, pear, apple, peppercorn, herbal bay leaf, wheat, cracker, hay, straw, grass, light leather, musty funk, and yeast earthiness. Damn nice aromas with great complexity and balance of fruity/funky/spicy brett, spices, and light-moderate pale malt notes; with great strength. Taste of big lemon, orange peel, apricot, pineapple, pear, apple, peppercorn, herbal bay leaf, wheat, cracker, hay, straw, grass, light leather, musty funk, and yeast earthiness. Good amount of earthy yeast spiciness and slight tartness on the finish; with lingering notes of lemon, orange peel, apricot, pineapple, pear, apple, peppercorn, herbal bay leaf, hay, straw, grass, light leather, and musty funk on the finish for a short bit. Damn nice complexity, robustness, and balance of fruity/funky/spicy brett, spices, and light-moderate pale malt flavors; with a great malt/spiciness/tartness balance and zero cloying flavors after the finish. Moderate dryness after the finish from carbonation. Medium-high carbonation and medium bodied; with a very smooth, crisp, and lightly acidic/sticky mouthfeel that is great. Alcohol is very well hidden with minimal warming present after the finish. Overall this is an excellent spiced brett saison. All around great robustness, complexity, and balance of fruity/funky/spicy brett, spices, and light-moderate pale malt flavors; and very smooth and crisp to drink for the ABV. A very enjoyable offering.

Waxed 750 shared by Marcus. Pours translucent gold with a slight white head. Aroma is very peppery. Med body or so. Flavor is non-chili pepper, some nice fruit, and just maybe a little brett sour. Maybe. Rather pleasant.

KRS 311214. Deep golden colour with an off-white head. Aroma is brett, funk, fruit, malt. Flavour is brett, funk, fruit, malt, pepper, herbs, orange. Nice beer.
