Gehopt tot ongeveer 18 bittereenheden met overjaarse hop uit Poperinge. Na de hoofdgisting aan 18° Celsius gaat 80% van het bier in lagering aan 0° Celsius voor een periode van ongeveer 2 maanden. De overige 20% van het bier gaat naar de bewaartanks waar het een spontane melkzure gisting doormaakt die tot 18 maanden kan duren. Dit natuurlijk verzuurde bier wordt dan met het jonge zoetere bier versneden.

Bottled from 124 rabbit club. Poured a dark brown with little head. Not very sour for a sour ale but I liked it.

Appearance: Cloudy bronze colour, one finger tall ivory-coloured frothy head of medium retention. Aroma: Caramel, lollipops, esters, dried fruits, light vinegar. Taste: Light plus sweet and light sour. Dominant caramel. Dried fruits, lollipos, a distant hint of vinegar, grass. Mouth feel: Medium body, average to lively carbonation. Summary: Needs to be drier. Not bad though.

5,5% on the label. Yoghurt and caramel aroma. A good deal of milky sourness. Strong karnemelk (soured up milk with lactic bacteriae) flavor. Some cherry. Not too well balanced, but in fact a good example of a Flemish brown ale.

Bottle from Dranken Geers. Pours dark reddish brown, off white head. Aroma has interesting funky caramel, woody, medicinal. Gentle sour in the taste, woody, caramel, overripe plummy notes, light vinegar. Decent easy-going oud bruin
