Wrapped in a red cloak, this aromatic and complex beer reveals a scent of spice, orange and malt, followed by caramelized notes and a finish as hot as dying embers.
It evokes the Quebec legend of La Chasse-galerie – or flying canoe – which tells the tale of men who would risk anything for a night of fun, even making a pact with the devil.

Pours a slightly hazy deep golden brown with a decent off white head that dissipates to peach fuzz on the top. Smells of caramel, pepper, oranges, and pomme fruit with a bready earthy yeast aroma. The flavor is spicy with a sweet caramel malty backbone. Light sweet fruits mingle with earthy yeasty flavors. Medium body with a high level of carbonation and a sweet spicy bubbly mouthfeel. Nice brew. Probably not my favorite, but well made beer just the same.

Bottle. Pours hazy amber orange with a large orange-tan head that dissipates with good lacing. Aroma is yeast, caramel, a mixture of spices, orange peel, coriander. Flavor is about the same, light to medium sweet, medium spiced, light zesty bitterness. Medium body, nice carbonation.

Bouteille 341ml.

Bottle from the Liquor Depot, Banff. It pours hazy golden amber, with a medium white head. The nose is spice, cola cubes, caramel/toffee, cinnamon (akin to Big Red), candy sugar and hot cross bun. The taste is brown bread, spice, candy sugar, some dark fruit (raisin, currant, date), metallic and strong cinnamon notes, with a dry finish. Medium body and harshly over-carbonated. Carbonation spoils it for me......

05/09/2012 330ml bottle (2008 Vintage).

pours copper with a big foamy light tan head. Aroma is peat/roasty medium malt, some dark fruit-cheery, yeast. Taste is peat-medium malt, wood, some spice/earthy hops, slight fruit. 3.2 It comes across better at cellar temperature, but still seems a bit thin.

Bottle pour. Paired with meal featuring flank steak. Mahogony, small head fades quickly. Initial sweetness and complexity evolves into a simpler, less complex slightly fruity taste. Went well with the meal.
