This is a classic cider. With a wonderful fresh apple juice aroma and effervescence that tickles the nose the cider gives an initial burst of sweet apple flavour on the palate followed by citrus and woody notes derived from the bittersweet and Jonagored apples used as the base ciders. This carbonated cider is best enjoyed as a refreshing thirst quencher, chilled to 7 degrees (watch the ice – whilst it will maintain the chill it can conceal the full flavour!).

This was our first and remains our most popular cider. The medium dry contains approximately 20% cider apples and 80% eating apples. The cider apples provide the astringency in the cider and the structure on which the full, rounder and more citrus characteristics of the eating apples hang themselves. Our apples for this cider are currently drawn from the counties of Laois, Waterford and Tipperary. The eating apples are harvested from late July through to September and the bittersweet apples are available from October onwards.

Sweet applejuice, with tart edge. Light tannins, a bit of almondy tannins. Quite plain, quite sweet, but nice and crisp.

Aroma is good apple slight raisin rather sweet and yeasty. Taste is sweet apple with good slightly fermented body. Good balance. Drinkable. Surprisingly good for a random cider in a cinema. (Star wars episode IX for the record)

50cl bottle from Abeervinum, Rimini, Italy. Pours clear gold with limited white foam. Aroma is sweet of apples, apricots. Body is average, with good carbonation. Taste is medium-high sweet. Final is fairly long and sweet.

Bottle @ Bell Bar, Cork (Maldron Hotel). Small head with short duration. Color is golden. Aroma and taste are apple juice, fruits, little sugar and has a semi dry and light sour finish.

Bottle sampled at Cider festival. Almost clear yellow golden with white head. Sweet apple, light tart apple grapes and a burn if lemon. A touch of funk and sweet and sour pears. Medium sweet, light tart. Medium bodied. Fresh and clean, nice.

On tap at L. Mulligan Grocer, Dublin. Clear golden with small white head. Lots of apples, tart and sweet. Bit too much sweetness in finish.

500ml bottle from Sterk, Amsterdam. Golden colour, white foam head and fruity apple aroma. Taste is juicy apple, sweet, fruity, with a caramel hint, and some woody tartness. Medium bodied, spritzy carbonation, medium-dry finish. Quite drinkable

500ml bottle from Baggot Street Wines. Golden colour, foamy white head that dissipates away to a thin layer leaving some lacing and musty apple aroma. Taste is tangy apple, sweet, with some light oak, caramel and funk. Medium bodied, soft carbonation, semi-dry finish. Quite drinkable.
