Blend 3 bottle drunk 2/20/16. Hazy pour is extremely light white gold. White head atop is large but recedes to cover steadily.
Very mild nose shows soft lactic notes, funk, sweat and light sulfur. On top of that is a bright, perfumey brett character showing lilac and lime. Really helps brighten things. Wheat and bread behind it dont disrupt the delicateness much if at all. No alcohol or flaws. Nice restraint on the barrel.
Incredibly soft, floral and with a delicate wheat and honey character. The funk is developed but relaxed. Great attenuation and yet still malty with good tannic structure but no toastiness. Unbelievably drinkable. Could/would guzzle lots of this. Tight carbonation. Fantastic saison. Not just a sour/wild ale.

Draught, half pint. @Fermentoren, Copenhagen (Denmark). 11/05/2024 [#7.464 Global - #1.468 United States of America - #5 Side Project Brewing] Blend #5. Pours hazy yellow with a small and lacing white head. Aroma: barnyard, wild yeast, wood barrels and peach. Taste: funky and earthy. Vinegar finish. Next one, please!
Mild aroma, especially after the last. Stone fruit. Taste is pleasantly tart, lightly fruity. Somewhat inscrutable in flavor but nothing off. Lemon and orange aftertaste.

Pale golden color. No head. Barnyard, sour , oak, wheat, apple and peaches in the nose. Very light body, low medium bitterness. Tart and funky. Super refreshing and light body. Finish is a bit too dry and quick but great complexity

Soft, smooth and slightly oaky with some lemon, citrus and zesty grapefruit. Easy going but complex, pretty crushable.
