La Ruche is a delicate Missouri Saison fermented using a blend of our local microflora and a traditional Saison yeast. Orange Blossom honey was added to this soft beer for refermentation in a Missouri Oak Foedre and was aged to maturity before being naturally conditioned in the bottle.

Bottle: Poured a slightly hazy golden color ale with a medium size white foamy head with good retention and light lacing. Aroma of funky yeast notes with light barnyard notes with faint notes of honey and tart notes. Taste is also a mix of funky yeast notes with some light honey, medium tart notes and some oak notes. Body is pretty full for style with good carbonation. Solid wild ale with a good mix of drinkability and complexity.

Light, sour, a bit tart. Apricot, honey and as a pleasant surprise some barnyard funk. Clean, refreshing, low acidity. Very nice.
