Part two in a series of site-specific pétiilant-naturel batches pressed and bottled during the 2019 harvest. Earth Edge is made from unique, mostly unknown apples varieties harvested from a century-old settler orchard planted in a quiet and beautiful bay traditionally known as ILEĆEN (english translation ‘Earth Edge’) in the WSÁNEĆ (Saanich) peoples’ language. Light, fizzy bubble, savoury profile, and an intriguing aroma of dried pith and rose petals.

Nice carbonation on a medium orange body. The aroma is soft round apples, some sharpness, subtle apricot juice. Flavour is bright apple with a nice balance between sweet and bitter, hints of green skin on the back end, aromatic sweet wood notes. Slightly floral and citric at the same time. Mouthfeel leaves dryness but also a hint of residual sweetness. A bit of a sleeper but still very nice to drink.
