Enigmatic Taxa is a hoppy farmhouse ale with grapefruit juice and zest added to the coolship.
The base beer is inspired by Belgian Hommel Bier. We brewed a 13 Plato wort with Llano, Texas Pilsner malt, Biscuit, Carafoam, and a touch of Abbey Malt. We kettle hopped with Columbus, Loral, Ekuanot, and aged hops. We racked the wort to our coolship for overnight chilling and added fresh grapefruit zest and juice that we hand-processed. The next morning we racked the wort to stainless steel for mixed culture fermentation with our blend of brewers yeast and native yeast from our land. After primary fermentation, we dry-hopped with Cascade, Belma, Mosaic, and X17 from The Oregon Hophouse. Unfiltered, unpasteurized, and naturally conditioned.

Bottle 750ml @ Aulin. Pours murky deep golden with a off-white head. Aroma has notes of malt, citrus, grape, pine and floral. Taste is medium sweet and light to medium bitter with a long grapefruit, pine, floral and citrus finish. Body is medium, texture is thin to oily, carbonation is soft.

Bottle, massive gusher thanks to Kenny. It pours hazy orange with a small white head. The aroma is musty, funky, dirty, earthy, leather, dirt, barnyard, lacti, dirty cheese, pine, floral, spice and greenness. The taste is firmly dry, tart, musty, earthy, green, weedy, dank, pine, grapefruit, leather, pomelo, lactic, musty, sherbet and pucker with a drying finish. Medium body and moderate, foamy carbonation. Not bad.

Sample from 75 cl bottle. Hazy golden colour with a thin white head. Fruity aroma with grapefruit juice, fruits and tropical impressions. Taste is bitter. Medium body with a creamy texture and an average carbonation. Finishes dry and bitter with fruit juices.

Bottled. A hazy golden beer with a lazing yellowish head. The aroma has notes of hops, straw, and spices. The flavor is sweet with notes of lemons, brett, straw, and exotic fruits, leading to a tart finish.
