We’ve teamed up with the creative brewing powerhouse that is Northern Monk to make this full-flavoured spruce pale ale. Using spruce tips in beer has a long history dating back to the Vikings with recipes surviving from the 17th century and records of Captain Cook enjoying a jug or two on his voyages. The spruce tips were picked while young and fresh from Holkham Estate in North Norfolk, where much of Adnams barley is grown. Colin from Northern Monk and the Adnams brewing team have combined ctirus-led hops to accompany the lemon and gentle pine notes from the spruce.

It’s a sprucy banger of a beer!

Can, 4.3%. Faint piney and dusty aroma. Hazy golden colour. Small stable white head. The flavour starts off very bitter. Then comes a peachy fruit note. And finally a mild but distinct note of fresh spruce tips.

Cask @ The Grove, Huddersfield. Golden with a creamy-frothy head. A winter spiced ale, herbal in this respect, with a crisp hoppy base.

14/12/2018. Cask at the Kings Head, Woodbridge. Pours clear golden with a small off-white head. Aroma of pine, hops, sweet fruit, malt, and caramel. Moderate sweetness, heavy bitterness. Moderate body, slight watery and sticky texture, soft carbonation. Bitter and lightly spiced finish. Packs more of a punch than a typical Adnams brew.

100ml draught at Taphouse. Clear golden body, spotty lacing, clingy lacing. Spruce on the nose, mid-dry. Herbal hops mixed with spruce to the taste buds. Ends with a moderate bitter end. Quite alright. (Copenhagen 25.11.2018).
