We made a blend of several barrels of beer with different ages (1 up to 2 years old), which were macerated with different types of grapes — three in total: Olasz Rizling (white), Muscat (white), and a little bit of Kékfrankos (red). The concentration of fruit in this wild ale is high: 425 grams per litre.
In the aroma you’ll find floral notes like roses and elderflower, light strawberry notes from the addition of the red grapes, and a touch of spice and vanilla from the oak barrels. The scent might remind you of a natural wine: funkyness and apple skin. With the first sip you’ll notice the firm tannins this wild ale has. This is a result of the long maceration on wine grapes. Together with a high flavour density and solid acidity, Olasz offers a very wine-like drinking experience.
Note: when drinking it young, we recommend to decant the Olasz well, to open up the aroma — give it some time. This beer is suitable for several years of aging, to balance itself out, and let the tannins soften.

Bottle, online from Beer Gonzo. Pours light hazed orange with slim white foam. Aroma: strawberry, raspberry, red grape, oak, Flandersy hints, funk. Taste: light to moderate tart / sour, light sharp grape vibes, funky. Medium body with spritzy carbonation. Very good.

Bottle sample at a Leo Cell's tasting at Porter & Sons. Cloudy golden. Funk, grape must, oxidation notes, sour, some acetone, a bit sweetish.

Bottle pour at Vilaggio della Birra 2022. Cloudy deep orange with small white head. Nice funk, stone fruit, grapes, vinous, juicy. Somewhat acetic.

750 ml bottle, bb 18-02-2030. Amber, moderate hazy body, with a medium, fluffy, off-white head. Aroma of grapes, wine, almond, wood, some citrus, subtle funk. Tastes similar. Medium, slick mouthfeel, with an average carbonation. Finishes moderate sweet, medium wooden, slightly funky, vinous, with grapes, almond. Tasty. Very well balanced and elegant, like most TS stuff. Lovely grape and vinous notes. Score: 8 / 4 / 8 / 4 / 16

Bottle pour, taster. @MBCC 2022, Copenhagen (Denmark). 13/05/2022 [#4.915 Global - #285 Netherlands - #1 Tommie Sjef (My Dutch brewery #99)] Pours orange with no head. Wood barrels, amontillado and soft cherry. Good acidity. Some vinegar. Nice. Next one please!

Taster at gfs, courtesy of Sander, big thanks. redish / amber hazy color, small white head. smells spices, bit leathery, minerals, horse radish, oak, citric, light tannins. full body, soft carbonation. tastes tannins, spices, leathery, some horse radish, bit joghurty, some lactic notes. finishes lightly dry and medium sour with notes of tannins, joghurt and lactic sourness. hmm, expected a bit more from this, heavy on the lactic / joghurt notes, wine notes more noticeable through tannins then any kind of grape notes. Need to revisit, but right now a bit underwhelmed
