Just as the previous few years we brewed a doppelbock to accompany our classic autumn special, the IJbok. The base is always a solid amount of malt but otherwise this seasonal heavyweight has a different recipe every year. This time, we opted for outspoken malt varieties to define its character. The use of Munchener malt results in its full, malty flavor, whereas the German rauch malt deepens its complexity. This is a beer with a smoky edge and as strong as you like it to be in stormy weather: 9,5%.

Bottle from trade with bierkoning! Trübes rötlichbraunes Bier mit ordentlicher beiger Schaumkrone. Geruch röstmalzig, getreidig, würzig, hefig. Geschmack süß röstmalzig, leicht gehopft, Karamell, reife Früchte, leicht alkoholisch.

Dark brown with thin head. Aroma and flavour have a certain herbal background which is not so nice. More pleasant notes of cocoa and bittersweet malts come to the rescue.

Bottle from Burg Bieren, BB 09/2015, large sample. Clear copper color, short frothy light-brown head. Aroma is slight roasted, caramel, autumn leaves, slight earthy hop. Soft caramelly sweetness in a typical Doppelbock way, toffee. Slight unclean yeast. Dominant malts, which is key for the style. Medium carbonation, body on the thin side. Slight alcohol touch. Decent beer.

Very dark amber brown colour, small frothy tan head, recedes quickly to thin layer, light lacing. Aroma sweet malts, light roasted, caramel, brown sugar, maple syrup, figs/raisins, some liquorice. Taste medium sweet, slightly bitter, roasty notes, caramel. Full-bodied, slightly sticky texture, soft carbonation; finish smooth sweetbitter with more bitterness in the aftertaste, slightly alcoholic, roasted malts, bit spicy. Very nice and easy to drink.

Bottle. Dark reddish brown with medium beige head. Brown sugar, spices, milk chocolate, cloves and bread with nuts. Medium sweet with slightly sticky feel. Decent.

On tap @ In De Wildeman. Clear, very dark brown color with a red hue. Beige, uneven head, pretty good lacing. Aroma’s: caramel, IJ yeast, hints of red fruit, retronasal also some sweet malts, roasted malts, droppig. Flavor is moderate sweet, roasted. Alcohol feel is rather strong. Medium bodied. Flavor develops to rather bitter eventually.

On tap at the brewery. Pours a clear dark brown with an amber hue and a light brown head that dissipates to the edges a and laces slightly. Aroma has sweet dark bread with a hint of dark fruits and toffee. Flavor has same sweet dark bread note with some toffee and a hint of sweet chocolate.
