750ml bottle [at only 5.6% abv]. Cloudy, yellow-ish, golden colour with average, frothy to creamy, moderately lasting and lacing, white head. Mildly funky, minimally spicy and yeasty fruity aroma, minimally bready and grainy, pale malty background, weak woody overtones, vinous fruitiness, hints of white and grey bread, white grapes, a touch of quince, chamomile, mustard seed, woody yellow apple, oak. Taste is tart-ish, fruity, mildly funky, yeasty spicy and minimally bready, pale malty, hints of white grapes, a touch of quince, unripe yellow apple, mustard seed, chamomile, some oak, some zesty, citrusy (hoppy?) aspects of old lemon peel, grapefruit peel with corresponding mild bitterness. Watery texture, slightly dry and minimally astringent palate, medium, dense, prickly carbonation. Complex, full of subtleties, no flavour is given priority, none comes up short, mild and temperate overall - exquisite.

Poured from 750mL bottle (thanks Derek and Jean Francois; bottled 01-07-22 / bb 01-07-23). Clear blonde gold with white head. Really nice gentle foudre funk, underlying rustic grain, feint houblons, dry mild oak finish, great balance. Excellent.

Pale, just a slight bit of biscuity warmth to that colour, and nothing more than the merest chill haze. Not much head, and it popped pretty flat, but it does have some carbonation. Quite fruity, blueberry, gooseberry, and also floral. A little bit of brett and some oak to add layers to the aroma. Fairly full body, again a touch of brett. It's pretty dry and oaky in the finish, with a touch of floral sweetness. Lean, complex, nuanced, this is great stuff.

(750ml 2021 bottle @ Le Clocher Penché, Quebec City, June 20/21) Pours lightly hazed bright yellow with a big loose white head and some lace. Aroma is almost textbook oak-aged funky saison, great blend of rustic cereals with a softly fruity ester and moderately spicy phenol profile expressing sweet lemon curd, light pit fruit, some sour citrus and peppery peels, white grape hints, bitter herbs and pine needles and earthy, mulchy funk with a woody blanket overtop. Flavour is lightly sweet and lightly acidic up front, again full cereal and yeast character, mix of sweet lemon and tart white grape with citrus peel blend, lots of leafy grassy slightly peppery Noble-type hops, soft pine and bitter green tea, quite yeasty and earthy-funky, drying finish with a light acidic seam and lots of drying oak tannins plus bitter leaves, pepper and dusty yeast. Light to medium-bodied with smooth filling creamy carbonation. Really nice rustic saison with a powerful barrel and hop presence, like the Gaspé hops in this!

Power tasting at Phill's, corked bottle
Blond colour, hazy, highly carbonated, with large head. Big funky aroma, hint of grass, hay. Highly carbonated, it has a good funky character, but it's also quite sulfuric and tannic, the finish shows some vegetable bitterness.
The aroma is inviting, the finish is a bit of a letdown.

750ml (thx, Jonathan D.!) on Phill's deck. Appearance: hazy golden with a white head. Aroma: nice funk, hoppy, rustic. Taste: along the same lines, with manure and barnyard notes, super dry like some of the ciders, somewhat soapy. Overall: very interesting and quite complex.

Clearish gold with a big white head. Perfume and some white glue notes. Light glue and a touch of lemon rind. Solid.

750mL bottle, pours a hazy golden with a medium white head. Aroma is loaded with tons of horse blanket, pepper, lots of barnyard funk, and some rustic notes. Flavour reveals an intense bretty barnyard funk, lots of horse blanket, a bit of oak, and a touch of pepper. Bone dry, with a touch of bittering dry hops, finishing with intense barnyard funk. Lovely.
