Reviewed from notes. Consumed 12/03/2019.
Can to English pint glass.
Appearance: dark brown close to black in color with a two finger khaki foamy head which dissipated nicely to leave some light lace
Aroma: dark chocolate, milk chocolate, black coffee roast; light peanut butter tones, dark bread, light black licorice
Flavor: takes the prior noted aromas but leaves out the peanut butter tones as that becomes more like a toasty nutty vibe then combines to a mild sweet to bitter and underscored by light spices; finishes dark bready, dark chocolatey, and nice smooth coffee tones
Texture: light to medium bodied, somewhat sessionable; some smoothness with some dryness
Overall: this is way smoother than their 120 days dry aged stout. I'd come back to this one before the 120 days one.

One in a series of three (the others being 90 and 120 ‘days dry aged’, respectively), experimenting with dry aged malt, and apparently inspired by dry aged beef steak (hence the cow depicted on the can). Can shared with Craftmember and Goedele. Thin, pale greyish beige, dissolving, open head, very dark chocolate brown, near-blackish but still visibly brown – and cloudy, not to say muddy. Aroma of soaking wet ‘fondant’ chocolate bars, coffee grounds, wet leather, beef stock cubes, bonfire, old dry bayleaf and thyme, cola, charcoal, old-fashioned roasted chicory, dried cranberries. Sweetish onset with a pronounced dry beef stock cube-like umami effect, medium carbonated with a smooth body, but strangely lacking a bit in the oiliness one expects from a stout of this strength. Bitter ‘wet’ chocolatey middle, brown bread and dried tree leaf aspects, quickly turning roasted bitter and coffeeish in the end, while becoming a bit ‘dirty’ and earthy as well; herbal, tea-ish hop bitterness accompanies this coffeeish, eventually even somewhat ashy roastiness. Old school roastiness is something I strongly appreciate in a stout, but this one feels a bit undercarbonated and too ‘dirty’ for its own good; the aged malt, however, does add a beef stock- and dry tree leaf-like quality, but I would not associate it with dry aged beef in any way hadn’t I read that there is a connection.

Can @ tasting. Poured almost black in color with a tan head. Similar to the 90 days, as it has roasted malts, coffee and some milky notes. Smooth mouthfeel, coffee, chocolate lingering.

Can split at BD Soho, thanks to a random guy, 03/01/20. Light black with a decent tan covering. Nose is dark malts, dried fruits, raisins, chocolate, toffee, brown sugars. Taste doesn’t really pick up much from the aroma, dark fruits, cocoa powder, roasted bite, leather, toffee. Medium bodied, fine carbonation, light drying close. Passable offering by Evil Twin standards ... firmly stuck in 3rd gear !
