American pastry stout aged on wooden barrels in LaGrange, Georgia. Can from Bier Bazaar shared with Goedele, Antonia, Siska, Wolf and Sylvan. Medium thick, pale greyish beige, opening, fine-bubbled head on a black beer with hazy burgundy edge. Intense aroma: melting 'fondant' chocolate, toasted pecan nuts, indeed old oak wood, almond, vanilla beans, toffee, tawny port, dusty old and 'whitened' chocolate bars, dried prunes, whisky, coffee. Sweet onset but not cloying, light 'beefy' umami touch, candied figs and pear syrup, soft carb, full and oily body a bit thinned by alcohol; profound black-chocolatey, toffeeish and walnutty malts with hazelnutty edge, light coffee-like roasted bitterness but the sweetness prevails. Lovely tannic woodiness in the end matching with lively vanilla, a peppery hop bitter moment and pronounced whisky-like alcohol, the latter beautifully softened by ongoing chocolatey and nutty maltiness so remaining soothing and agreeable. Beautiful pastry stout, not over the top in sweetness and 'pastryness' so still connected with classic American style imperial stout - modern and classic at the same time, in a way; every flavour element matches well with the next. I need more from this brewery!
