We pressed Normandy poiré-pears from the Plant de Blanc varietal, harvested at ‘Ferme de L’yonnière’ (Jérôme Forget), and co-fermented this juice with the juice from local heirloom apple varieties. As we didn’t separate the juice from their solids, we left enough yeastnutrients present for a bone dry finish of fermentation.

Thanks CT for sharing the bottle! Wineglass showing pale gold with half a finger of clean white foam.

The nose shows moderately intense notes of baked pear and raisins.

The palate is well carbonated and light bodied. Dry with notes of pear and light bacon.

Hybrid of perry and cider with different pear and apple varieties, by the coveted Antidoot brand from Belgian Limburg. Off-white, membrane-lacing, thin and quickly opening head, misty yellowish straw blonde robe. Aroma of indeed very pronounced pear (ripe sweet Durondeau – even if other varieties were used), stewed apple, dust, some old cheese rind somewhere, raw button mushrooms (oddly but strongly), quince, sweat, raw zucchini. Crisp flavour, lots of ripe pear sweetness with a dash of green melon to it, less prominent apple, the sweetness quickly nullified by drying lactic tartness and fruit skin astringency, but never losing its overall juiciness. This weird raw button mushroom flavour hovers over it all, and I have no explanation for it: maybe there was some mildew on the pears that got into this final product? In any case, Melancholia proved drinkable and interesting, with an odd combination of flavours and aromas that somehow works – once you get used to it.

Flaska från Antidoot, 2023. Klar blekguldig med vit försvinnande krona. Relativt snäll arom. Päron. Väl avvägt och stramt smakmässigt, med päron i förgrunden. Drar ihop sig rejält i munnen, minst sagt snustorr. Gott, elegant och snyggt.

Carnivale Brettanomyces 2023. Pours a clear, pale yellow colour and a white head with a little retention. Aroma's: apple, pear, funky. Retronasal: sourish, apple, pear. Flavour is above moderate sour, fruit. Light bodied. Mouthfeel is very dry. Short finish.

0,75l bottle at Carnivale Brett, Amsterdam. yellow clear color, small white head. smells apples, pears, minerals, subtle tannins, bit grassy. full body, soft carbonation. tastes apples, pears, tannins, lightly funky, earthy. finishes dry and light to medium sour with notes of apples, pears and funky notes. Very nice one, very mature apple cider, great complexity
