Barley Wine Ale, Vintage 2019 aged in Bourbon barrels for over a year
This years vintage is a blend of time. We had a few lingering barrels from the fall of 2017. To that we added a few more from early 2019 and topped it off with some from the fall of 2019. All of the barrels we used were bourbon. The bulk of which were previously used for Heavin Hill, with some Angel’s Envy and even a couple Wild Turkey in there as well. But this years version isnt really about a big bourbon character, it’s more focused on the subtle bourbon flavors that are inherent to this beer. After the sweet punch right away subsides you will get flavours such as Dried figs, raisins, and vanilla. Then the malt gives Paragon it’s caramel, toffee, and chocolate flavours that rounds out with mild sweetness, bringing it full circle.
The beer has a slight viscous texture which coats your mouth in a flavor explosion of all the forementioned tastes, while doing it’s best to hide the alcohol.
Drinking reccomendations are to serve it around 7-8 °C in a snifting glass and sip it slowly allowing to warm as you go. Your mouth will discover new flavors as it does. For us this beer represents our passion for the old style and the life of a brewers work in a bottle. Please enjoy with sofistication.

Vollmundig malziger, süßlich schokoladiger Beginn. Kakao, etwas Kaffee, viel Schokolade und erkennbarer Alkohol im Mittelteil, dabei weich und cremig, der Kakao kommt immer weiter in den Vordergrund. Intensiv würzig, erdig, holzig, langer Nachgeschmack. Lecker! 9/13/13/14/11/14

Аромат просто шикарен, много карамели прежде всего, есть коричневый сахар, немного легкой жженой карамели на палочке, нотки кофе, легкая ваниль, мед, ассоциации с приправами легкими, немного даже от зефира что то, очень схоже на ликер местами, но алкоголя нету. Цвет карамельный, пенки конечно нету. Вкус очень выверенный и сбалансированный. Снова много карамели и сахара с конфетой. Эти нотки очень раскрываются при глотке. Есть очень тонкие нотки от хмеля и бочки, малость травянистости, но в основе все же сладость карамельная. Много коричневого сахара и карамели. В целом почти идеал, только не хватает остроты от этих ноток.

Bottle picked up a few years ago (don't know where from) had this at home, Friday 31st May 2024 listening to Indie Forever on 6Music with the Nathan Shepard. Pours black with a rapidly departing head. Superb big Barley wine, thick in the mouth, tons of flavour barrel aging immediately apparent and offers a lovely indulgent booziness that lasts, little boozy fumes even come down the nose. Lots of dark sticky dried fruit, raisins and dates prominent amongst them. This is a stunner of a beer.

Bottle at home, by the fire, Christmas Day, 25th December 23. Pours a dark mahogany colour. Aroma is caramel, toffee, dark fruits. Taste is sticky toffee, caramel, prunes, dark fruits, bittersweet, long toffee linger. Delicious Barley

0,33 flaske med eske og jålete voksforsegling, hjemme: etter en liten kamp med forseglingen og en kort gusher blir jeg belønnet med raffinerte inntrykk av de lekreste sjokoladekarameller, vanlije, bourbon, lønnesirup, konfektbiter og tørkede frukter som fiken, rosiner og svisker. Silkemyk i ganen og varmende i kropp og sjel. Mørk mahognyfarge med svært kort skum og ettersmak som bare blir mer og mer portvinsvinøs. Flasket 14082020 og bf 14082032, så da kunne jeg for såvidt ha ventet noen år, men det kunne jeg ikke se før jeg hadde kjempet meg gjennom forseglingen. Angrer ikke et sekund, tvert i mot, for hva er egentlig vitsen med å være velsignet med en svak karakter hvis jeg ikke skal ha litt glede av den i ny og ne?

Bottle at home in Hackney - picked up from HOTM. Pours nice brown with a fading, beige head. Medium to big sweet flavour, subtle oxidation, lots of stewed fruits, toast, raisins, figs, dates, toffee. Full bodied with fine carbonation. Mellow warmth to finish, lots of semi-dark fruits, a little caramel, bourbon, raisins, fruitcake. Great stuff, really well balanced.

Bottle at a share. Pours unclear deep brown with a beige cap. Aroma: toffee, burnt caramel, raisins, sweet oak, bourbon, molasses. Taste: heavy sweet. Beautifully deep & complex, caramel, treacle, molasses, sweet oak, bourbon barrel Medium to full bod with light carbonation.

15cl draft @ Beergium.
Couleur brune foncée/acajou, col léger blanc-cassé, le tout sur un filament huileux au verre.
Arôme sur un bouquet généreux de Bourbon avec un délicat vanillé, rétro-nasal sur des malts toasté, chocolaté, caramel avec en supplément de fins effluves de fruits noirs et secs -dont de la figues et dattes. Ca charge du lourd tout en surfant entre un barley et un gros stout.
Palais est épais - assez 'old school' dans l'approche, il aurait même fallu laisser ce barley wine s'ouvrir une grosse heure pour bien en profiter. Se retrouve tout le caractère qui fait de ce gros barley wine un classique très bien ficelé - c'est chargé en fruits noirs avec un léger côté d'épaisseur et rondeur en fin de bouche avec un caramel/toffee, le tout laissant tout de même un léger fini sucre résiduel collant aux lèvres.

Bottled with Veceo and others. Dark brown body, no head. Vanilla, dried figs, light dust in the aroma, coconut, bourbon, obvious barrel aging. Soft lean taste, vanilla, raisins, cocoa, caramel, wood and honey notes. Well hidden alcohol, some old barrel touches, sweetish but not aggressively so. Not perfect, but excellent nonetheless.
