Barley Wine Ale, Vintage 2019 aged in Bourbon barrels for over a year
This years vintage is a blend of time. We had a few lingering barrels from the fall of 2017. To that we added a few more from early 2019 and topped it off with some from the fall of 2019. All of the barrels we used were bourbon. The bulk of which were previously used for Heavin Hill, with some Angel’s Envy and even a couple Wild Turkey in there as well. But this years version isnt really about a big bourbon character, it’s more focused on the subtle bourbon flavors that are inherent to this beer. After the sweet punch right away subsides you will get flavours such as Dried figs, raisins, and vanilla. Then the malt gives Paragon it’s caramel, toffee, and chocolate flavours that rounds out with mild sweetness, bringing it full circle.
The beer has a slight viscous texture which coats your mouth in a flavor explosion of all the forementioned tastes, while doing it’s best to hide the alcohol.
Drinking reccomendations are to serve it around 7-8 °C in a snifting glass and sip it slowly allowing to warm as you go. Your mouth will discover new flavors as it does. For us this beer represents our passion for the old style and the life of a brewers work in a bottle. Please enjoy with sofistication.

Bottled with Veceo and others. Dark brown body, no head. Vanilla, dried figs, light dust in the aroma, coconut, bourbon, obvious barrel aging. Soft lean taste, vanilla, raisins, cocoa, caramel, wood and honey notes. Well hidden alcohol, some old barrel touches, sweetish but not aggressively so. Not perfect, but excellent nonetheless.

Bottled@AIH147 (thanks TBone!). Very deep coppery brown colour with a minor offwhite head. Aroma is chocolate, alcohol, some wood, rye, with also some mild grainy notes. Flavour is sweet dried fruits, some toasted tones, chocolate, alcohol, rye bread, vanilla and syrup. Intense flavour, and a nice palate. Surprisingly smooth to drink.

Reddish brown colour with no head. Very sweet and malty. Some jam like qualities. Strong and intense. Nice Bourbon.

Bottle picked up from Kihoskh and drunk at home (03/09/2022) - dark brown with a tiny ringed beige head. Intense opulent bourbon infused sweet malty, with layers of dark dried fruit shred, spices, sweet caramel and toffee, brown sugar, cocoa accents, full bodied, vanilla and bourbon coalesce into the sweet malty warming lingering finish. Exquisite.

Shared bottle at Lervig Local, Stavanger. Pours dark copper without any head. Aroma of oak, caramel, dark dried fruits, ethanol. Tastes sweet with little bitterness. Medium bodied, sweet finish. Could not make it better.

Superficial festival rating at Brew Festival, Oslo 2022. Saturday session 1. Dark brown body under a dense beige head. Aroma has dark malt, dark chocolate, coconut and Bourbon. Taste is very sweet, dark malt, some dark chocolate, hint of wood and much alcohol with a Bourbon, coconut, vanilla flavor. Full body with long lasting sweet and boozy aftertaste. The aroma was the best part here, otherwise a bit too sweet and boozy for my taste.

On tap at Brew Festival. A lightly hazy auburn colored beer with a dense beige head. The aroma has alcohol, some dried fruit, lightly roasted malts, toffee and some notes of chocolate and coffee. A vague oak touch too. It's full-bodied, warming and smooth on the palate, with some tannins. Quite alcoholic flavor too, with toffee, lightly roasted malts and dark dried fruit. Chocolate, coffee and oak notes. Everlasting finish. A very nice one indeed, especially the aroma. 220430

Bottle at share. Darkish amber, bubbly head. Aroma is leathery, tobacco, malty. Taste adds brown sugary notes, bourbon, booziness, some coconut, chocolate and marshmallow.
