In keeping with the festive season, our winter I.P.A. is brewed with spruce needles, hand-picked from discarded Christmas trees. We go against the grain by crafting a White IPA rather than the typical dark beers common in the winter months. The gift-giving winter tradition of the Lowlanders continues, as they give their loved ones initials in chocolate letters – or now in bottles of our winter I.P.A.

Hazy golden colour, frothy white head with a small layer retention. Aroma's: fruity, soft fruit, light citrus. Retronasal there's actually some spruce, but it reminds a bit of mint, and resin. Falvour is light sweet, light fruity, with a hint of bitter. Light bodied, but not too thin. Light bitter finish. Not bad, not memorable.

Look: cloudy gold with a one finger tall white airy head of medium retention. Aroma: earth, juniper, spruce, mould, biscuit. Taste: mostly the same, quite dry. Medium minus bitterness. Mouth feel: medium minus body, average to lively carbonation. Overall: pretty strange, not exactly hitting my spot.

Bottle. Brewed with spruce needles and juniper berries according to the label. Color: Lightly hazy golden, frothy white head. Aroma: Malty, bread, floral hop. Taste: Malty, bread, floral hop, some citrus, only light hints of spruce and juniper. Moderate sweet and light to moderate bitterness. Subtle pine at the finish. Expected much more bitterness and pine from this beer. Mwah.

Een beter waterig. Niet super hoppig. De jeneverbes is wel lekker. Dennennaalden redelijk afwezig.

Bottle 33 cl. Golden color, almost clear, white foam. Aroma: strange, spruce needles and bark, citrus, herbs, juniper berries, sweetness and nectar. Taste: spruce needles, a little juniper berries, a little pear, herbs, light bitterness, quite specific brew.

Had another go at this one. A lot less than earthy than before. Still dominated by pine and spruce. Bitter. Moderate watery texture. Circa 2.9 March 07. 2020 Gold with a frothy white head. Interesting aroma that’s not typical for an IPA. Lot’s of pine for sure but very, very earthy—and these are not fresh pine needles but ones you forgot about and left to molder in a dank basement. Strong tones of garden weed top it off. Taste is bitter the whole way through. Finishes earthy with a touch of water. Medium bodied, balanced carbonation. Nein, danke.

33 cl. bottle @ home, bought @ Albert Heijn Culemborg. Hazy light golden with a white head. Fruity aroma with pine needle, citrus and juniper berries. Taste is medium bitter with a herbal bitter finish. Nice one.

Ruikt een beetje naar witte peper. In de smaak fris, kruidig, floraal, grassig. Weinig mis mee.
