In keeping with the festive season, our winter I.P.A. is brewed with spruce needles, hand-picked from discarded Christmas trees. We go against the grain by crafting a White IPA rather than the typical dark beers common in the winter months. The gift-giving winter tradition of the Lowlanders continues, as they give their loved ones initials in chocolate letters – or now in bottles of our winter I.P.A.

Bottle at THT Amsterdam (Tolhuistuin). Colter Wall plays Kate McCannon. Slightly unclear golden with big white head. Sweet and dry malts, floral and spruce, light honey. Moderate sweet and bitter. Medium body and soft carbonation.

Bottle. Golden pour. Aroma of soapy hop, subtle juniper and malt. Taste has some soapy juniper, bitter hops and spruce. It's hard to make these beers without the soap notes unfortunately.

Hazy blond with thin head. Aroma and flavour have plenty of pine and floral notes. Also some citrus. Nicely bitter.

Nice hazed golden pour with a fine head. Ok lacing. Looks fine and inviting. Lovely spruce aroma. Yummi. Fine balanced sweetness and an ok carbonation level. Easy to drink. Spruce, fruity, malty and citric flavor. Nice tasty one!

29 December 2018. Christmas beer evening; shared with Anke. Bottle from Albert Heijn. Pours clear yellow with a lasting, frothy, white head; little lacing. Aroma of spruce, pine needle & resin, lemon zest, juniper, wheat, unripe tangerine, grapefruit. Taste is light fruity sweet, notes of apple & lime; quickly turning medium hoppy bitter, piney & grassy, some grapefruit peel, sourish accents of wheat, juniper & lemon zest. Dryish, piney finish, getting more resinous towards the very end, although the lingering sour juniper, wheat & lemon soften the palate. Medium body, slick texture, fizzy carbonation. This works!

Draft at Taproom, Amsterdam. Fairly hazy orange golden with an off white head. Aroma of malt, caramel, citrus, light fruits and yeast. Flavour is above moderate sweet and bitter. Medium bodied with light carbonation.

Fles thuis geprobeerd met LiekevdV. Het is een troebel geel bier met een volle witte schuimkraag. Het heeft een frisse dennen geur. De smaak is hoppig en harsig met een bittere afdronk. Drinkt lekker erg.

0.33 l bottle from 'Sterk Avondverkoop', bottled in September 2018. Slightly hazy, golden amber with a medium large, foamy, stable, white head. Sweetish, fruity-floral, slightly resiny and a bit grassy aroma of grapefruit, lemon peel, some spruce, traces of banana and faintest hints of juniper. Gently sweet, moderately bitter, fruity-floral, spicy-resiny taste of tangerine, orange, juniper and spruce, followed by a medium long, gently bitter, quite resiny and spicy finish with lots of spruce and juniper. Medium body, moderately effervescent mouthfeel, average carbonation. Quite nice, way better than last year's Winter Ale.
