We took the same grist as Tilth and racked the fresh wort on top of lots of fermenting merlot must. We added our house mixed culture then transfered the beer off the grapes into one of our American Oak Foeders, where it matured for 12 weeks before being transfered to a brite tank where it dosed with table sugar and fresh yeast. We're tasting ripe juicy strawberries, freshly muddled raspberries, slight pepper, hay barnyard funk and underripe blueberries.
