Simcoe, Simcoe, Simcoe. Where would we be without you? A strong contender for our in-house favourite varietal purely on the basis of how adaptable it is, we’ve utilized this giant of the brewing scene on single hop showcases across the board, from DIPA to IPA, now it’s the turn of a more sessionable effort, with us loading this DDH Pale Ale with the same dry hop charge as one of our big IPAs, bordering on DIPA territory. Featuring an insane 40kg, and with an ultra light sprinkling in the whirlpool; apricot, passionfruit and citrus notes are positively bursting out of this beer, before being reeled back in with a healthy balance of earthy pine bitterness. With everything wrapped up in a warm hug of our bespoke LA3 yeast strain, this is our love letter to one of the true superstar hops.

Keg draught at Wilfred Pinsent and Grandson, Mountsorrel. Very light gold, hazy, a thin white head with good lacing. Berries, citrus, stone fruit all compete with a strong herbal character in the aroma. Taste is sweet, more berries with a good malt backbone, a little musty. Light bitterness at the finish. Light body with light to medium carbonation. Decent but not Polly's best work.

440ml can at the Wrekin Inn on 19th March 2023. Hazy golden yellow with a decent white cap. The Simcoe hops do their thing with a citrusy aroma and taste with a piney trace here and there.

440ml can from Vinmonopolet Langnes. Remaining white head over a cloudy grey-golden body, spotty lacing. Promising aromas of grapefruit and pineapple. Citrus flavours, orange and grapefruit, on a backbone of grainy malts. Mid-dry bittersweet finish. Medium bodied. Delivers quite well. (Tromsø 05.01.2021).

440ml can SophiesBeerStore.co.uk. Proper hazy milky oaty complexion, large white head. Big fruity exotic aroma. Palate is soft, not overly smooth, presenting pleasant juicy apricot, passionfruit, grapefruit with a little earthy pine and a nice rounded bitterness. Great fresh hoppy IPA.
