A blend of wheat and blond ales aged in oak wine barrels for up to 18 months with black and red raspberries, fresh ginger and thyme. This unique project offers carefully layered flavors of ripe bramble fruit with a refreshing ginger lift and soft notes of lavender and pine.

750ml corked and caged bottle from the lcbo. Pours a slightly Cloudy reddish purple, with a small slightly pinkish white head. Incredibly tart, loads of earthy thyme, big berry notes, light lemon, with some hints og of mint. Very sour finish, light funk, thyme is very strong as it warms, the berries are still strong and prevalent, and the finish is minty with notes of earthy pine. Quite complex and interesting.

Bottle at nicks. Pours clear reddish orange, nose is funky, oak, berries, vanilla, taste is tart berries, juicy, sharp funk, tart.

Quite nice. Tart with a lots of fruits. The thyme is unfortunatly only on the nose.

On tap at MBCC Blue Session. Pours a dark ruby with small pinkish head. The aroma is strong berry, oak, earth, ginger. Medium body, jammy blackberry, ginger, funky, lacto, nice tartness, enjoyed this.

Bottle at tasting. Aroma of rich raspberry, oak, tart, wheat, spices and acidic sourness. Taste has rich raspberry, oak, thyme, acidic sourness, wheat, tart and a fruity sour finish. Very nice.

Keg at Cask Pub and Kitchen, Pimlico, London. A ruby/red coloured pour with a thin white head on top. Tart, raspberry, ginger, thyme, pine aroma and taste. Not really my style of beer but I can appreciate the quality of this sour beer, became more drinkable as it went on.

Bottleshare @ Mikkeller, Odense. Thanks to Bickle. Pours Dark purple with a pinkish head. Massive Spice and berries. Thyme and ginger and massive raspberries and blueberries. Dry and really tartish dry flavor and finish. Its sippable and tasty - yet slightly unrefined slash in-elegant.
