Inspired by visits to California in 2011 and the highly bitter, yet fruity pale ales we tasted; Pilgrim is our gentler take on the style. We used the Pilgrim hop as a bittering hop to give the characteristic bitter base and finish. For the fruity aromas and taste we used the classic craft beer hop Simcoe. Simcoe adds a sweet fruit and pine aroma to Pilgrim.

Bottle from Stori. Appearance - golden with a nicely proportioned head. Nose - flowers, custard and lemon. Taste - custard, almost caramel. Burnt brown bread. Palate - light to medium bodied. Dry, roasty finish. Overall - decent.

Third by cask on the second day of GBBF Winter 2020, Sonnet Bar. Shared with Finn. Patchy head, misty golden body, dotted spots on the glassware. Promising smell of herbal hops added by mid-sweet malts. Mixed taste of grapefruit, dried fruits and leaves. Mid-dry bitter end. Pretty alright. (Birmingham 05.02.2020).
