Bottle with old name - Brauerei J. Kemker; Best before 31/10/2020, 330ml bottle; 6% abv Dinkelbier (spelt beer) with organic and local ingredients; purchased at the La Cave à Bières d'Etre Gourmet online shop in April 2020;
APPEARANCE: gusher, small loss of the beer despite very patient opening; golden, flower honey like color with haze but still degree of transparency, visible carbonation in the middle, snow white head with tiny but also fluffy bubbles, nice lacing;
AROMA: quite authentic and similar to Belgian lambic or oude geuze; musty, smooth funk, loads of sweet apples and also green apples in the background, freshly made lemonade, moderate sweetness of spelt bread, bread crumbs & crust, soft tartness, no acetic sharpness, mild notes of yoghurt, minerals and stone fruits like apricots, subtle floral honey vibe
TASTE: lively carbonation but not too sharp or numbing, loads of fluffy and even creamy bubbles, surprisingly oily and slick mouthfeel with medium plus body for just 6% abv; moderate sweet bready onset with nice support of juicy, fruity esters, sweet apples and ripe apricots, lemon candy sweetness; soft lemon and white wine like tartness cuts through before medium light noble hop bitterness arrives with notes of herbs, gentle spice, wood, hints of wormwood and subtle plastic in the background; mineral and fairly dry finish with lingering bitterness and notes of bread crumbs; no lactic presence in the flavor, very low amount of funk on the palate
OVERALL: l’m pleasantly surprised by outcome despite gushing; very harmonious, refreshing and highly quaffable spelt - farmhouse like German beer;

Bottle from Etre Gourmet webshop, Grez Douceau, Belgium. Had this Friday 15th May 2020, still on CORVID-19 lockdown, listening to Breathless - Green to Blue. Extremely lively on the pour, lost about 25% of the bottle, thankfully but flukely I was pouring whilst near the sink. Pours hazy gold with a white head. A little floral, light funkiness, but the suggestion of sweetness. Taste is zappy and funky, fruity and tart, nice tingle/prickly on the tongue. Good.

Champagne and perhaps apples on the nose, nicely fizzy and farmhousey.

On tap @Luppolo Station (Rome). Ambrata scarica, leggermente torbida, schiuma bianco-sporca media. Al naso note vinose, citriche, di mela annurca, stalla, cantina, botte, leggero acetico. In bocca è appena dolce all'attacco con acido medio, citrica, tart, un po' dritta, lievissimo acetico. Corpo medio, carbonazione media. Non male.

Keg at Mikkeller Berlin, 11/07/19. Light haze on a golden blonde pour with a decent off white cap. Nose is citric flesh, wood must, spelt, funk, toasted grains. Taste comprises soured fruits, wood must, stale bread, grains, lactic pinch. Medium bodied, fine carbonation, semi drying close with a light puckering kiss. Interesting enough sour.

Clear medium golden color, a lot of small bubbles, small but
steady frothy white head. Aroma grain, lemon, apple, tart, herbal notes. Taste medium sweet, bitter and sour, apple, light lemon, spelt grain; sweet and sour and mild bitter aftertaste with grainy and earthy notes.Lively carbonation, creamy mouthfeel. A bit boorish feel but tasty and well-balanced.

330ml bottle @ Chez Sophie, Shrewsbury. Pours misty gold with large white head. Big and blossoming wild floral sweet nose. Taste continues with a bright fuzzy carbonation that lifts those complex, delicately sweet spiky floral flavours up and away, remaining lively fresh and invigorating until the end, unlike other 'wild' beers I've had of late. A wonderful beer from a promising brewery I'll be searching out more from.
