Hops are not the only thing that is important in beer. This is just one element of many. Therefore, in the era of admiration for hops, it is sometimes worth looking at beers that focus more on malts.
We did it and we brewed our Koźlak, or Bock. An unique beer with a characteristic ruby color and an essential caramel-hoppy flavor. The durable, fine-bubble head is light and only slightly tinged with the color of the beer. The aroma, of course, has hints of malty, reminiscent of dark bread. In addition, a delicate plum and raisins. Strong malt flavors are well-balanced with bitterness.
The Polish name “koźlak” is a translation from German, where “bock” means a goat. The word “bock” itself comes from the Hanseatic city of Einbeck in northern Germany. This is where, since the 13th century, strong top-fermented beer has been brewed using wheat malt and barley malt. Almost every inhabitant of this city was involved (directly or indirectly) in brewing. Great importance was attached to the quality of the beer, so the beer was always tasted before being sold. The one that did not pass the “check” was simply poured out. Such good and even quality gained fame and popularity outside the country.
We have been brewing Koźlak since 2003.
It works well as an addition to smoked and grilled meats and salami. It makes a great combination with all cheeses: blue, baked, fried. It also works well as an addition to desserts and ice cream.

500ml Bottle - Brown with orangey tinges. Rye bread, caramel and raisins in the aroma. Malty, sweet and fruity taste with leather, rye bread, raisins and caramel standing out. Some blackcurrant can be detected in the finish.

Kirkas, punertavanruskea olut käytännössä ilman vaahtoa. Vaaleampi ja punertavampi perinteiseen colanväriin verrattuna. Maltainen, karamellinen ja leipäinen tuoksu on melko mieto (6). Maku maltainen, hieman leipäinen ja makean karamellinen (5). Keskitäyteläinen, melko runsashiilihappoinen suutuntuma (3). Kokonaisuudessaan hieman pliisu ja aavistuksen metallinen, mutta ihan toimiva kokonaisuus.

Many thanks to beerhunter111 for this bottle. The beer starts malty brown. Round with not too much sweetness. Round dry, nice malty roasted bitterness. Not too deep but interesting!

From a 500ml bottle on 4/6/2016 (ABV listed as 6.3% rather than 6.5%). Pours an opaque amber with a biggish head which disappears. The aroma is very malty - all caramel and toffee. Take a sip and there’s more caramel and toffee, brown sugar, rye bread and a bit of dark fruit in the background. Finishes with a modest bitterness. Has a slick texture and moderate carbonation. Very much heading towards dessert territory, this is really lovely stuff, and hugely under-rated on here imo.

500 ml bottle. Pours a hazy orange copper color. Rich sweet caramel malt nose. Sweet caramel malt flavor. Notes of baked bread, baked apples and earthy, nuttiness. Sweet and malty. Lacks complexity. Leave the bocks to the Germans.

Bottle from the Polish Deli on the Cowley Road on Record Store Day, Saturday 16th April 2016 consumed down the office the same day. Warm reddy amber in colour with an off-white head, it’s a beautiful colour. Lots of toffee and a big malty flavour, chewy but more refreshing and drinkable than I was expecting,I guess it’s a little predictable but good, there is also an metallic edge like a bit of iron, lovely beer. A6 A5 T7 P3 Ov13 3.4
