One of the beauties of beer and brewing is that the best beer in the world and the worst beer in the world are made from (pretty much) the same ingredients. It’s all about having passion and focus on details -- this easy drinkable all brett fermented beer is brewed with my favorite hop variety, Simcoe. So simple, yet so complex. Enjoy!

Sample at CBC 2014. Hazy yellow with a small head. A lot of brett in this one. Also fruit, bread, hops and hay. The finish was tart and dry. Easy to drink.

Draught @ CBC’14
Aroma is mellow with peaches and some caramel. Flavour has peaches, some orange and resiny tones. Nice and refreshing. Not sour or tart like table beers usually are and does not feel very Belgian. More like light pale ale.

Pours hazy yellow with a smooth white head. Aroma of fruits, citrus, yeast and earthy notes. Taste is smooth, yeasty and tartish fruity with some citrus and grapefruit. Finish is smooth, yeasty and slightly tarty. Okay, smooth and slightly tarty Belgian blonde.

The Sampler, Brooklyn tap ($6): Pours hazy orange/yellow with a nice white head. Aroma is a great combination of tropical fruit, citrus, and a hint of funk. Taste is powerful hops. Pretty bitter, but not harshly so. Slight sweet undertone. Everything goes together really well. I wouldn’t really call it a wild ale though...
