A 2-year-old bourbon barrel-aged version of our sake-inspired beer brewed with Sea Buckthorn, Sea Salt, Sea Weed (Kombu + Hijiki) and Yuzu juice.
The result is a beautifully rounded, mature beer with superb character from its time in its barrels. Yadokai was originally a mass collaboration with Black Friars + Hanging Bat in Edinburgh, Nanban in London and ourselves. This symbiotic relationship was developed as a way of bringing the chefs, bars and breweries together to create something incredible.
This is an absolutely unique tasting and balanced beer brewed with Scottish and Japanese ingredients at our farmhouse brewery in Somerset! This version was set aside and racked into Bourbon barrels to develop micro - oxidation character over 2 years. It’s Yadokai the sequel, 2.0, and there’s a strong case to say it’s better than the original.

Bottle, online from the brewery. Pours murky orange gold with a cream coloured cap. Aroma: barrel, citrus peel, vinous, light medicinal. Taste: moderate+ sweet with some tangy bitterness, toffee, citrus, dessert wine vinous, calvados, spices. Medium to full body with light-ish carbonation. Huge boozy finish. Intriguing for sure! Preferred the BA to the regular version.

Bottle shared at Chris and Ruth Pre-GBBF 2017 tasting - London. Cheers! Pours unclear orange with a light, creamy white head. The nose holds light medicinal notes, wood, orange peel. Medium sweet with some toffee, jammy citrus. Medium to full bodied with fine to average carbonation. Warming finish with light citric tang, more wood. Novel, not bad.

Backlog March 2019. Well stored bottle. Almost clear golden body under a small off-white head. Strong and pleasant aroma of malt, fruit, tea, wood, vinous and kind of boozy in a positive way. Taste is sweet malt, warming alcohol, fruity, wood, umami and some berries. Fine body with long lasting aftertaste. Smooth, nice, exiting and complex. Nice one.

330ml bottle bought at Independent Spirit in Bath almost a year ago. Shared back home at a session with djoeye and Finn. Dissipating beige head, fragile lacing, misty amber coloured body. Grass, wood, and hints of gooseberry on the nose. Taste of seaweed, bread, tart berries and apples. Warming, dry, and tart finish. Different and fair enough. (Tromsø 10.04.2018).
