We took our classic Rauchbier, added chipotle chillies, then we left the
fermenter open, much like they do with Flanders styles, and let the
local yeast in the surrounding air inoculate and help fermentation.

Pours clear blonde, no real head. Smell is smoked, spiced ( peppers, some heat ) . Taste is full, heath by the peppers, smokey background. Not bad, but too hot and smoked, the latter of which i'm certainly not a fan, making this one very unbalanced.

23 February 2019. (Tasting formerly known as) RBBWG. Cheers to all, thanks Kraddel for the hospitality! Hazy pinkish orange with a quickly thinning, off-white head. Rather pungent aoma of bacon, green olive, smoked herring, burnt matches, sourdough, faint green banana, old apple. Taste is light to medium malty sweet, bready & yeasty with notes of smoke, bacon, fruity touches of green apple & unripe banana (getting some acetaldehyde here - infected?), quickly turning medium spicy bitter though, pepper & chili heating up, which results in a dry, grassy hoppy finish with a very hot chipotle burn, faint smoke & bacon. Medium body, oily texture, fizzy carbonation. Fascinating brew but too aggressive for me.

Sample from bottle @ tasting formerly know as RBBWG 2019. F: medium, white, average retention. C: gold, hazy. A: a lot of smoky tones, smoked meat, sausages, bit caramel. T: sour fruity, some peppery, chili, smoked bacon, bit fruity again, funky, medium to full body, medium carbonation, very weird combo but very nice for me, one bottle must enough even for chili lowers.

04/02/2018 @home - 33cl botte from Malt Attacks. Cloudy orange, with medium white head. Nose has lots of smoke with some lemon and chilies in the back. Taste is malts, sour touch, lemon, dry smoke, smoked bacon, hard burning chilies. This must be too crazy when I read what this beer was about but for me the very different tastes all slide into one another as it should be. Crazy, very tempting but nice.
