4 Massolino Chardonnay barrels were used to age Dulle Teve upon in 2018. This is a blend of Barrels 1,3 and 4.
Barrel 2 will have a seperate bottling and label, due to its very different, higher acetic profile.

Hazy golden colour, white creamy foam. Nose of lemon, citrus, barnyard, wood, white wine. Taste is tart, notes of unripe fruit, citrussy, lactic sourness. More tart and sourish than expected.

Obviously aged White head, glass-sticky, over cold hazed orange-golden beer. Fruity, yeastesters, orangepeel, jumble of esters really, wood. Citrus, fruity², complex as few... I didn't even recognize Dulle Teve basic beer. Faintly hay, and other barnyard flavours giving a layered complexity. Sour plums, Reine Claude. Very slick, viscous, alcoholheat. Rich and rewarding. Mind-blowing. Whereas IMHO Dulle Teve is a more classical standard strong blond, this is top-quality, ranking amongst Dolle Brouwers very best.

Pours cloudy blonde. Medium sized head, soapfoamy texture. Medium to medium low stability. Scent is damp, wet oak, full, funky, aged (not oxidized) very mature. Hints of fruit. Taste is very full, medium tart (builds up), very wood forward. Wine aspect is mild, as Chardonnay isn't as powerfull as the base beer, but it embraces the beer in a hug-full-of-love. Medium carbonation. Overaal, a pretty amazing beer, and might just be one of, if not my top, favorite de dolle !
Storytime : As I went to pick up the barrel to age our wedding beer upon ( Poppy Para Mi Sherry) it wasn't emptied, so I helped them a hand ( I swear, quality control equals helping out ! ). I was shocked by how good it was, straight from the barrel. Even filled a waterbottle to have my wife-to-be have a chance to taste this. This final form, bottled with refermentation, and a blend of 1,3,4 , is less smooth and more sour than I remember the cask pour to be. I still love it very much and it's exactly what I had hoped for. In the end, Poppy Para Mi Sherry was to be blended with a lambic of some sorth, to get sourness in, but wasn't due to the sourness it picked up in the barrel. It's a similar sourness that is to be found here, which of course brings personal references and reasons to love this beer to the table. Extremely happy I was able to pick some of these beauties up!
