We made this delicious sweet cyser (apple mead) with our friends from No. 18 Brewing of Wuhan, China. Karl brought us five-year-old fermented Pu'er tea from Yunnan Province. The tea was in a unique compacted disc shape that we had never seen before. We first brewed the tea to test it out, and it was great. It provides tannins and flavor which act as balancing agents to the organic Arizona cider and Arizona wildflower honey.

Pours clear, pale yellow. Scent is strong on the apple side. red, sweet apples come to mind. No real honey, as well as tea. Taste is medium full to fullbodied. Strong apples, but honey delivers quite a support. A hint of tea makes the beverage more complex. Nice, aromatic, gentle Cyser.
