Our most traditional spin on a classic Belgian farmhouse style beer, with a Rustic Danish Shipyard Ale twist.⁠⁠ ⁠⁠ A relative of our Havnesæson, Bagsæson starts off as a very traditional "saison" style base, and is then open fermented in our wooden conicals with our unique and ever evolving local microflora to bring that true Rustic Danish Shipyard Ale character.⁠⁠ ⁠⁠ Aged in European oak foeders which have only held our beer and no previous wine/spirit to bring a light and gentle oak quality that is balanced by a mix of old and new world hops.⁠⁠ ⁠⁠ Low in acidity and high in drinkability was the goal of Bagsæson, much like the spicy farmhouse style beers of Belgium it is modelled after.⁠ Aged for 10 months.

Bottle, 0.75l, shared with Sima, David, Pier @ nonna Rosa. Aroma is yeasty, vinous, stone fruity and funky. Pours dirty orange color with thick creamy off-white head and good lacing. Taste starts refreshing tart vinous and citrusy with passion fruit note, following is yeasty, floral, stone fruity and funky with smooth mouthfeel. Bottle.Dark orange colour with medium white head.Aroma is fruity and bitter with taste of citrus and wood mild tart note and mild sour finish.

Bottle at home. As blend #1 (2020). Pours a hazy amber colour with big off-white head that fades fast. Aroma of barn yard, oak, rowanberries, green apples and dried apricots. The flavour is similar with the addition of bread, heather and cirtic acid. Has a slick mouth feel, medium body and a soft bitterness. Sour and tasteful.

Sample (thanks omhper!). Golden colour, small white head. Aroma is fruity, yeast, some spiciness with mild nectary tones. Flavour is fruity, nectary, some floral, spiciness quite yeasty.

Tap at the brewery. Poured a hazy golden orange colour with a thin white head. The aroma is yeast, light orange citrus. The flavour is moderate to light sour, with a smooth, dry, juicy, light tart, peach, orange, passionfruit palate. Medium bodied with average carbonation.

Backlog Dec 21. Blend 1. Orange, moderate hazy body, with a big, frothy, slightly yellowish head. Lovely aroma of citrus, barnyard, wood, apricot, straw, Tastes similar, a bit more citric, with more peach. Medium, a bit creamy mouthfeel, with a quite lively carbonation. Finishes smooth, with just enough sweetness and sourness, wooden, fruity, citric, slightly funky, with stone fruits and some straw. Lovely! So balanced and smooth, with surprising amounts of fruit notes. Just enough sourness to balance the fruity, grainy and funky notes. Almost perfect, traditional Saison! Score: 9 / 4 / 8 / 4 / 17
