As the name says, Brewer’s Desire is the beer that our master brewer has dreamed of brewing for a long time, a nectar of the greatest rarity…This 100% malt beer (pale malt and lightly roasted malt) is brewed with aged hops and boiled for an extended period of time. Different yeasts from the Pajottenland region, that have been isolated and then cultivated, are added to the cooling vessel. The famous Brettanomyces enter also into action, and do their secret & mysterious work.This unique brew is allowed to mature for 2 years in oak barrels before being bottled, unfiltered, to undergo a final secondary fermentation with the same yeast.A single precious batch has been produced, to be shared among demanding connoisseurs.Willem Van Herreweghen, master brewer, and Anthony Martin are delighted to present the result of this work and their passion.

Sampled @ Zythos Beer Festival 2022. A clear golden beer. Aroma of wood, vanilla, some Funk. Taste of mild sourish pale malt, oak, wood, vanilla.

Green bottle, 750 ml, brewed in 2013, best before 2057, purchased at the SAQ - Aylmer on October 7, 2020, savoured on June 17, 2021; eye: burnt orange, cloudy, no effervescence, no head, no lacing; nose: acidity, fruitiness, green apple, wild yeasts, sweat, light musk; mouth: acidity, fruity, green apple, wild yeasts, sweat, light musk, residual sugar, finale in acidity with fruity presence, medium body, good carbonation, lightly sweet, slick texture; in summary: correct

Bottle: Poured a deep amber color ale with a large foamy head with limited retention and not much lacing. Aroma of strong tart notes with some oak and funky ester with some acidic notes showing. Taste is also dominated by strong tart notes with some acidic notes and funky Brett ester. Body is about average for style with good carbonation. Enjoyable but too acidic to be truly enjoyable in large quantities.

750 ml corked & caged bottle, from Vinmonopolet, Nettbutikken. ABV is 7.5%. Golden colour, large white head. Aroma of brettanomyces, horse stable and wood, hints of smoke, stinking cheese and stale jam. The flavour is much better, fruity and slightly spicy, moderately acidic, moderate bitterness.

2/XI/19 - 75cl bottle from the brewery (Toer de Geuze 2019), shared @ the big Zombicide Tasting, BBE: 2057 - (2019-1806)

Clear orange beer, small creamy off-white head, little stable, non adhesive. Aroma: funky, weird, bit metallic, fruity touch. MF: lively carbon, medium body. Taste: very funky, bit weird, metallic notes, fruity touch. Well, at least it’s not all diacetyl, like the Guinness collab… MF: lively carbon, medium body. Taste: very funky, bit metallic, bitter, lemon peel, bit chemical, bit dirty. Aftertaste: bitter, funky, not very pleasant.

Bottle 750ml. corked @ [ Assentoft Tasting by Hansen & Zita ]. [ As Brasserie De La Taupe Brewer's Desire ]. ABV: 7.5%. Clear medium orange yellow colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, sweet malt, sour, tart fruit, light caramel. Flavor is moderate sweet with a long duration, tart fruit, sweet malt, fruity. Body is medium, texture is oily to watery, carbonation is soft. [20190914] 7-3-7-3-15

Frothy white good mostly diminishing head. Amber colour. Moderate malty and light hopy acetic aroma. Light bitter flavor. Woody sligtly acetic notes. Average finish. Oily palate.
