We’re pleased to introduce Cloudfeeder — our collaboration with Tired Hands Brewing Company in Ardmore, Pennsylvania! Cloudfeeder is a farmhouse ale fermented with Pennsylvania honey, Texas grapefruit, Texas limes, and dry hopped with Nelson Sauvin and Simcoe hops. It was brewed at Jester King with Tired hands in preparation for the upcoming Craft Brewers Conference (CBC) in Philadelphia.

For Cloudfeeder, our intent was to create a low alcohol, highly drinkable beer, that when fresh, would exhibit characteristics similar to American India Pale Ale. When working with our mixed culture of brewers yeast and native yeast and bacteria, our beer presents relatively clean when it’s young, especially if we brew it with a fair amount of hops. As we’ve pointed out before, farmhouse ales were historically either very bitter or sour. On occasion, as we did with Cloudfeeder, we use a combination of hops, fairly high fermentation temperature (78F), and the absence of long-term aging, to create a beer that’s bitter and not particularly sour/tart — at least not yet. Time, temperature, and hops are the levers by which we aim to balance the acidity in our beer, all the while knowing that the microorganisms will ultimately “decide” the character of the beer.

11 September 2021. At Summer Belgian Beer Geek Gathering. Many thanks, Klaas & Liesbeth, cheers to the whole crew!

Clear yellow, thin, white head. Aroma of lime zest, grapefruit peel, mandarin, clove, green apple, honey, bread crust. Taste has sweetish apple & pear, sourish lime, citrus peel, perfumey rosemary & thyme aspect (cue Simon & Garfunkel...). Floral hoppy finish, spicy bitter, lingering yellow fruit & grapefruit. Medium body, oily texture, average carbonation. Very aromatic at a staggeringly low ABV.

Bottle @ Belgian Summer Gathering Sept' 21, Evergem. Batch# 2, merci Ben, Bottled 03/2020.

Citrus juice focused nose with grapefruit and lime clearly standing out. Mineral, straw and hay with more lime and grapefruit pith and zest flavors. Bitter and mineral forward finish.

Poured from a 750 ml bottle. Aroma is very line forward with some lighter honey and grapefruit. A bit of grain notes with a medium light phenolic character. Some lemongrass and a bit of pepper and cilantro. Pours a hazy, pale, yellow gold with a medium large, thick, white head that recedes slowly to the edges where it lingers. Medium lacing and no legs. Flavor is slightly sweet with a very dry finish. Light grain notes and a bit of white bread. Medium lime and grapefruit notes with some light honey notes. Medium light bitterness. Moderate phenolic notes with some light pepper and other herbal notes. Mouthfeel is light bodied with medium high carbonation. Low astringency and low alcohol warmth. Overall, a nice Jester King beer, but not an amazing one. The lime is a bit overpowering in the aroma and the phenolics are too strong in the flavor. Decent.
