Taking inspiration from the entrepreneurial spirit that drives London life, this version of Soul Trader is made from just a single variety of 2018 Braeburn apples and fermented on-site by Roberto.
Pale and bubbly in appearance, the lightly sparkling cider bursts with orange and floral notes that give way to a yeast-like background. Similar in feel to a light champagne, the balanced taste delivers a twist of apple tart, and a pleasing acidity that makes it the ideal precursor to a delicious meal.

(Draught at King's Arms, Bethnal Green, London, 23 Nov 2019) Pale yellow colour with hints of green. Brief white head. Fruity nose with green apples and grass. Fruity taste with notes of green apples, pears, grass, Piggelin (Swedish popsicle) and flowers. Medium body, dry. Fresh, tasty and well balanced. Nice one.

On tap at The Stable, pours a clear pale blonde with a tiny white head. Aroma reveals champagne funk, seltzery notes, and apple skins. Flavour is loaded with champagne funk, apple must, and apple skins. Musty and funky, with a champagne-y finish. Excellent.

From keg at Hawkes in Beermondsay, London, 24.08.19. Almost blanc, with a hue of yellow. Some white head. Aroma and taste of sour apples, yellow apples and yellow apple zest. Not very complex.

Keg @ Stable, Birmingham. Pours clear gold, sparkling. Sweet fruity apple nose. Golden, rich sweet taste with distinct pineapple and gooseberry notes, soft acidity. Decent accessible sweet cider.

Tap. Clear pale yellow color with no head. Aroma is sweetish apples, some funk. Taste is apple sauce, apple candy, but not in an artificial way, quite funky, apple peel, dry finish. Mineraly, slightly mealy mouthfeel, lightly existing carbonation. Very curious and interesting, it has some flavours I've never seen before in a cider.
