This is a collaboration with Yucho Shuzo, a Japanese sake brewery in Gose of Nara. The Sake Yeast and Koji used in "Kazenomori" which is a flagship sake of Yucho Shuzo, and also water from Yucho Shuzo is pumped into tanks and transported to NBCo. It has an overwhelming Ginjo-aroma, like ripe apple, pineapple and rich strawberry. As a beer it is dry, but as a sake it has plenty of sweetness. And despite the absence of any hops, you can still taste a subtle bitterness, it derived from the amino acids in the malt.

Moderately sweet. Doughy pale biscuits. A little faint green herb. Straw. Interesting. Fairly simple. Drinkable enough.

CBJ tasting, thanks to Tips for the can. Pretty much a clear gold beer
, small pale cream colour head. Soft smooth palate, modest fine carbonation. Slightly grainy pale malts, a light creamy sweetness. Good sake sweet rice and booze. A mild citrus in the back end. Amusing.

Bottle at BBT 6/2024. Med-thin body, high carbonation. Med-high sweetness, surprising with the rather dry body and finish, light sourness, light bitterness. Considerable candyish impression in both aroma and flavour, lots of fruitiness, but weird fruit character, hard to classify. Apples/pears definitely present. Some ricey sakeish character too. Med-light alcohol warmth, feeling a bit boozy, but not too bothersome. Feels like a novelty, which is a bit hard to do these days. Overall quite good, interesting and rewarding sipper, I can imagine sipping the whole thing.

BBT 06/2024. Pale golden color with white head. Fruity aroma with malt, no hops. Taste is fruity, green apples, esters, light malt, rice. Alcohol is dangerously hidden.

deep golden color. Very quick dissipating head. Very heavy malty, sweet cereal nose balanced by massive sake yeast. Very funky and different. Really well made but can’t say I love it.

Bottle from Isetan. Ginjo sake nose! Fruits, koji, lemon, pear, green apple, lovely. Nice and bright, deep orange, a bit cloudy, with lace and effervescence. Rich malt flavor, pears, apple, peaches, spicy koji like yeastiness. Crisp and quite clean, and relatively dry. It has sweetness but less sweet than most other beers of the time I have had. Great stuff.
