奈良の日本酒蔵・油長酒造とのコラボレーションです。日本酒銘柄「風の森」で使われている清酒酵母、米麹に加えて、酒蔵から仕込水をタンクに汲み上げ、奈良醸造まで運び醸造に使用しました。熟したリンゴやパイナップル、濃厚なイチゴなど、圧倒的な吟醸香が感じられます。わずかな発泡と、米麹由来の柔らかな口当たり。ビールとしてはドライですが、日本酒としては甘み十分。そして、ホップを一切使っていないにも関わらず、麦芽のアミノ酸由来と思われるほのかな苦味を感じていただけます。

This is a collaboration with Yucho Shuzo, a Japanese sake brewery in Gose of Nara. The Sake Yeast and Koji used in "Kazenomori" which is a flagship sake of Yucho Shuzo, and also water from Yucho Shuzo is pumped into tanks and transported to NBCo. It has an overwhelming Ginjo-aroma, like ripe apple, pineapple and rich strawberry. As a beer it is dry, but as a sake it has plenty of sweetness. And despite the absence of any hops, you can still taste a subtle bitterness, it derived from the amino acids in the malt.

Nara Brewing Underwater Sake Yeast Beer 11.5% Matte brass with the tiniest film of foam and a rich stone fruit aroma. Full bodied with a bit of heat and a lush rich mouthfeel. Raisin bread pudding and smooth flavor that reminds me of Shimane’s Orochi series.
