People have asked over the years why hasn’t there been a base Austin? The answer simply is it hasn’t been ready yet. It plays well with fruit and oak, but it hasn’t been ready as a standalone. Like our stouts, we’ve been working hard behind the scenes to create a reproducible process that produces a beautiful and elegant farmhouse ale that is dry, slightly tart, full of flavor, and super drinkable. The interplay of our slow souring process, its respective microorganisms, hops, bitterness, gravity manipulation, and minerality has been through countless iterations over the years from different engines of Casey, Fruited Austin, TABA, DH TABA, and we’re pleased to announce that after years of RnD we finally have it dialed in and base Austin is ready. This ale while deceptively simple is one of our largest accomplishments to date. Austin has a similar elegant acidity of our recent DH TABAs, similar final gravity, but uses completely different microorganisms for fermentation, different hops, and hop process.

Austin is a farmhouse ale built by the inspiration to share beer with people close to heart. It is pale, tart, delicate, and complex with a bit of pleasant funk. This beer is unfiltered, unpasteurized, naturally carbonated and will continue to evolve over time if properly cellared.

Yellow pale slight clouded pour from .75l. Funky brett, lemon pepper. Pretty nice job.

375ml bottle from Dunell's in Jersey. Pours yellow with a white head. Aromas & tastes of white grapes, pear, herbs & wood. Medium body. Dry sour finish.

Bottle. Pours clear golden, medium white head, good lacing. Aroma is bright, lemon, funk, oak, light herbal note. Flavor is light plus tart, light funk, lemongrass. Medium body

Pours a slightly hazy, pale apricot color, with big head that dissipates quickly. Aroma is tart funk. Flavor follows. Very dry, slightly acidic, fruity. Crisp mouthfeel. Very nice saison.

Bottle sample at a tasting at Yoav's place. Murky yellow. Funky, spicy, some fruitiness, moderately sour, a bit of bitterness.

Bottle from Chris M, I think: pours gold with a white head. Aroma is sweaty, yeasty, floral. Taste is tangy, lightly tart, citrus, flowers, grape notes, yeast. Good.

750ml bottle pours out hazy orange topped with a fizzy head. Nose is nice tart funky barrel citrus zest and some spice. Taste is more of the nice tart funky barrel citrus and some spice.

Bottle, courtesy of Chris M. Pours dull yellow orange. Floral, lime zest, funk, lemon zest, light acidity, white grape must, apricot, orange cordial, bright zesty grape and passionfruit. A light spritzy body. Excellent.
