The Bianca series is where we fully explore the tart flavor spectrum and what a lactose infused sour beer can be. In the peach rendition, we have worked together with our beloved friend Chad Yakobsen at Crooked Stave, an actual doctor of brett, to find just the right tart, funky and earthy flavour profile to balance the peaches and raspberries.

Draught @ [ CBH2018 ] - Craft Beer Helsink 2018, Rautatientori (Railway Square), Helsinki, Finland 00100. [ As Crooked Stave / Omnipollo Bianca Persica Wild Wild Brett ].Murky medium yellow orange colour with a average, frothy, good lacing, mostly lasting, white head. Aroma is moderate malty, pale malt, apricot, peach, canned peach, light brett - barnyard. Flavor is moderate sweet and acidic with a long duration, tart, peach, sour, dry, citric - lemony, light funky - barnyard - brett. Body is medium, texture is oily, carbonation is soft. Golden with a white head - Good fruity sour aroma - Good fruity flavour that goes sour with some wood notes - The fruity wood and sour fruity flavours goes into the finish - This was real good

Tap at alus celle. Pours rather clear blonde. Médium small white head. Smell is fruity. Taste is mildly sour, very balanced. Fruity. Clearly so , yet not overpowering. Nice balance. Kinda like this beer, but don't think it's worth this price.

Keg at the Bottle Shop, 02/08/18. Lightly hazed golden orange with a decent off white cap. Nose is nice brett, funk, pissy citric, peach tang, basement esters. Taste comprises bretty pangs, light diaper dung, tarte peach hint of curry leaf, damp straw, sharp citric flesh. Medium bodied, fine carbonation, semi drying close with rising acidity.

Tap@Peders, Copenhagen - Almost clear yellow pour with small thin white head. Light tart fruity with some citrus fruity notes of lemon, some lime, light grapefruit, straw, some bretty action, medium to light bodied, tart finish.

Keg at the bottle shop druid Street. A bright yellow straw coloured pour with a fine sticky white head. Aroma is super sour. Pithy grapefruit, pez sweets,. Flavour is composed of semi sweet, sour, pithy lemon juice, grapefruit clean lacto, underripe pineapple. Palate is super sour puckering, clean. Moderate carbonation.
