Our wild black beer spent 18 months in oak before being aged for a further 6 months on local elderberries. The result is reminiscent of a deep earthy Burgundy.

Bottle at home in Hackney - picked up from BS online. Pours deep, clear cola brown with a modest, foamy tan-pink head. Medium sweet flavour with mild acetic twang, tart berries, moderate roast, earth, buggy funk, old wood. Medium bodied with massaging carbonation. Subtle warmth in the finish, more earthy bitterness, a little cocoa, roast, tangy berries, woody accents. Great depth.

Bottle on holiday. Deep red colour with an off white head. Aroma and taste have that very fruit. Dry and winey. Earthy with wine tanin. Great beer.

13/X/21 - on tap @ DOK Brewing Company (Gent), BB: n/a (2021-1156)

Clear dark brown to black beer, small creamy beige head, unstable, falls down quickly, non adhesive. Aroma: nice acidity, a bit floral, caramel, little funky, brett notes, some vinegar, nice stuff. MF: lively carbon, medium body. Taste: very oxidized, bit sweet, caramel, vinegar, more oxidation, a nice acidity, some balsamic. Aftertaste: sweet, caramel, little bitter, some tannins, nice acidity, funky, little soapy, earthy, bitter, black tea, some tannins, good one!

Draught @ Himmeriget, Copenhagen
Pours black with a off-white head. Aroma has notes of malt, tartness and elderberries. Taste is light to medium sweet and medium sour with a long tart, elderberry finish. Body is full, texture is oily, carbonation is soft.

Pink hued head on a near black body. Berry, sour & countryside aroma. Sour, vimto, under ripe berries & vinous tastes with an extremely bitter tangy finish.

Pours very dark purple. medium large, dark pink head. Scent is herbal (dry), berryfruit. Not very alike elderflower, but I get the resemblance due to the herbal side. Taste is full-on, intensely drying by both fruit and basebeer. Sharp, very herbal. Medium sour. Sweaty finish. Harsh maltyness. Might not be my favorite fruit, yet the base seems to be a bit unbalanced to me, as well.

Draught Dirty dark pink, small if stable head over deep purple, almost black beer. Quite fruity nose, red fruit/berries. Light bitterish, sourish flavour with indeed the flavour of elderberry syrup, diluted of course. Not much else. Feels really well bodied, ultra fruitslick, almost syrupy in the good way. Medium carbonation. Like it!

75cl bottle @ monthly tasting, Chez Sophie, May 21. Pours a deep, dark, hazy purple brown. Great earthly monolith base with nice fruity dark berries rising through. Fascinating stuff, really long fruity finish pairing with tangy woody wild elements. Excellent.

17th May 2021 Shrewsbury Beer Share in Chez Sophie; four of us splitting 14 beers and eating snacks. A fun evening, although the Polish Strawberry flavoured 'Flips' didn't go down too well. 750ml bottle from Mike, cheers! Pink head on the black body, deep red hue to it's colour. Dry Elderberries fill this baby, woody notes from the Oak barrelling try and push through, but the elderberries overpower everything and anything else really. Great if Elderberries are your thing.
