For the base recipe we kept it clean and simple – pale malt, a sprinkle of Magnum hops for bittering and Styrian Golding hops for some traditional continental aroma. But it’s after this that things take a left turn.

We use kveik yeast, a Norwegian farmhouse style noted for it’s fast fermentations. The strain we use offers a beautiful citrus background to the beer. We then spice things up with Sichuan peppercorns. This gives the beer an added dimension of complexity, but we don’t get too carried away! This is a big beer for someone looking for a twist on tradition.

Can from Dranken Vandewoude and drunk at home hazy amber colour. Lasting beige head. Some farmhouse yeast aroma. Some wild yeast. Some malt. Not much hop
Simple malty farmhouse beer. Fine.

Bit fluffy, huge off-white head over toast to golden beer. Very aromatic, herbal nose - it's the Sichuan, but it has also notes of lavender, bog myrtle, etc. Bit peppery malts, including coloured malts. Nutty, again aromatic; nutbread. Quite slick, at least medium bodied. Medium to good carbonation. Original, but not one to immediately seek out again... Txs to Stef!

Has the spice mixed into an amber funky base. Flavours mesh in not the greatest of harmony, but it is reasonably good. Hops n more Leuven

Pours unclear amber, fairly big white head. Scent is mildly spicy, both the pepper as well as the yeast - but not unbalanced or overpowering. Mild plain maltyness left. Taste is fairly exhausting, a bit sticky and overly yeasty to me (perhaps fermented a bit warm, but thats the whole idea of kveik) the pepper doesn't lift it up, in contrairy, it makes it even more exhausting. Not very sessionable, and as a degustation beer, it needs to be more interesting to me. Somewhat bitter, but that doesn't last too long. Malty, but nothing exceptionnal. Mouthfeel and body are medium, and so is my enthousiasm.

Orangey copper colour. Aroma is intense with floral Szechuan pepper. It comes through in the taste too, even has a slightly numbing effect on the tongue. Behind that is a solid grainy sweetness.

21 August 2021. At Gents Bierfestival. Cheers to the Ghent beer crew! The official version of the Demo #7, presumably. Hazy orange, small, frothy, off-white head. Aroma of banana peel, pear, apple, orange juice, pepper, clove, juniper, eucalyptus. Taste has sweet apple, orange & peach, sourish juniper note, bitter spicy & herbal middle over a honey-malty base. Peppery hoppy finish, lingering clove, ripe yellow fruits, distinctly herbal & perfumey. Medium body, oily texture, soft carbonation. Not entirely my style but at least it's a promising, original start.
