Ages ago, our dear friend Bim Lafontaine traveled from Japan to brew with us the inaugural batch of Brother Soigné, a collaboration that we continue to produce in the spirit of that visit.
We condition a small portion of Brother Soigné atop fruit pomace. The result honors both the legacy of that first brew day and the satisfaction of exploration.

Draught, 15th Anniversary Festival, 6/21/25.
Clear golden with soft peach-rose hints. Small, off-white head.
Juicy, soft, mellow and rich with a good balance of Brett and Sacch. Fruits are elegant and well-expressed, but not dominant. Nothing aggressive here, just soft fruitiness, mineral and house character with very slight honey-like malt and bits of cracker and biscuit.
Soft and malty with dainty fruits and no aggressivity anywhere. Good attenuation and body with homogenized fruit character and mellow, round fruity Brett, as well.

From bottle at Wild Festival 2021. Citrussy aroma with lime peel, some orange, suggestions of red fruits. Tart and mild sour, a little bitterness in the finish. Refreshing, balanced, complex. Medium body. A lot going on. Masterful.

On tap at Tørst. Pours hazy gold with a white head. Tart cherry, raspberry, funk, oak. Excellent.

Bottle from Silver. Cloudy orange with white head. Funky and tart, with pronounced citrus. Insanely balanced and light drinking. Very soft and well made.

750ml bottle pours out hazy orange topped with a small head. Nose is nice sweet cherries tart raspberry some lemongrass tartness and oak. Taste is more of the nice sweet tart fruit mix with a complex yet soft end.

Bottle at the 1st HF Tasting Oldmeldrum. It pours lightly hazy dirty blonde with a medium fluffy white head. The aroma is musty, funky, vinous, raspberry pucker, cherry, hay, grass, sweaty, funky, bready, baked goods, brioche, bran muffin, cereal, zingy blood orange, florals, hibiscus, oak and vanilla. The taste is crisp, dry, puckering, zingy, bright citrus, lime sherbet, blood orange, hibiscus, sherbet, refreshers, raspberry, vinous, spritzy, oak, hay, straw, minerality, splash of acidity and dib dab with a dry finish. Medium body and moderate carbonation. Fun fruity action.

Cherry and raspberry. Some grapefruit. Hazy pinkish pour. Light tangy finish. Great balance and easy drinking. Bottle.

750ml bottle I bought in Greensboro, pours a clear greenish gold with no head. Looks like natural wine. Nose has a lot of fruit, there is a clear stone fruit character, cherries, plums, pluots, some grapefruit juice, some funk. Flavor is tart with lime and raw plums, lots of plums, cherries are there but they are white. If there is some ground berry, then it’s very under ripe. Finishes tart, medium-high acid and basically dry. Very easy to drink, good complexity.

Now this is fun. Light, fruity, refreshing and summery. Lots of fruit there, clearly lime, and a bunch of various red fruits but reasonably subtle. Pretty tart, but I like it for it. The fruit and freshness make it great for sun.
