The Boysenberry is a fruit forward iteration of our local raw wheat and barley base, made with long-aged hops and inoculated and cooled naturally in our coolship after a several hour boil. It sees extended fermentation and aging on the lees in neutral French oak puncheon barrels that previously held red wine. During fresh berry season, we taste through a large number of barrels to find the perfect blend, expressing a balanced acidity and mature/complex Brettanomyces character. This blend was composed of barrels and batches averaging 19 months of age, and was further fermented in secondary oak tanks with intensely characterful local Boysenberries, fresh from the farm.

After fermenting to dryness with the fruit, it was re-blended, and naturally conditioned in bottles. It displays an incredibly vibrant fresh fruit character, perhaps the clearest translation/representation of berries we have tried in a beer, and of one of our personal favorite fruits. It will evolve in the level of 'funk' displayed over time, but we cannot help but want to share it while that clear and intense expression of fruit is still there!

Taster from 0,75l bottle in Sint-Truiden. Bottled 1/19. Dark purple color, small white head. Smells berry notes, jammy, spices. Very nice smell. Full body, soft carbonation. Tastes berry notes, bit tart, grassy, earthy, peppery. Finishes dry and medium sour with notes of berry, grassy and peppery notes. Very nice one, rather tart, but very nice berry notes.

ABV: 6.4%. Clear sparkling - speaking, dark red colour with a average to large, frothy, good lacing, mostly lasting, off-white - pink head. Aroma is moderate malty, wheat, dough, boysenberry, oak, funk. Flavor is moderate sweet and light acidic with a long duration, tart, wheat, dough, boysenberry, dry, funky, oak - barrel, vinegar touch. Body is medium, texture is watery, carbonation is soft. Bottle shared. Pours very dark purple with a medium pink frothy head. Aromas of heavy jammy boysenberries, almost tannic, lavender, lactic. Taste has lots of boysenberry, lactic acidity, lightly pitty dryness, some herbal notes.

Bottle. Thanks Joe. Pours hazy nearly Black with a pinkish head. Lively carbonation. A bit of a youghurt feel. Forest fruit. Dry and funky. Tartish. Okay.
