Continuing our exploration on the base of our bold American Imperial Stout infused with cold-brew coffee, we are proud to present Vanilla PM Dawn. We took our base recipe then slightly dialed back the ratio of cold brew Italian Roast from Barrington to allow the heavy dose of vanilla bean to balance the beer and perfectly accentuate its flavor profile.
Vanilla PM Dawn presents an opaque black with brown head and lacing. On the nose, an inviting freshly, roasted dark coffee aroma draws you in as highlights of Madagascar vanilla and burnt sugar syrup entice the palate. The flavor profile displays vanilla lattes, pot de crème, dried red fruit, molasses, and bitter baking chocolate.

10/18/18, straight up colada from Boston. Bit thinner than expected but insanely smooth 9%. Coffee beans on the nose, vanilla comes in at the back a bit but mellow. Annnnd it's gone, yummy in my tummy. Was hoping to try it with dinner brisket.thanks Andre

Dark ebony, unsure of clarity, though the edges are clear in the light, with maroon-burgundy highlights. Tan head is medium-to-small and recedes steadily to a ring.
Nose is initially full of vanilla with a quickly noted backing of milk chocolate and light fudge. Hints of raisin and bitter chocolate with mild roast linger on the edges. No alcohol whatsoever. Definitely smells malty and rich, though not overly sugary. No intense, dark, bitter roast like some batches have shown in the past.
In the mouth it's indeed malty, soft, sweet and rich with lovely fudge, milk chocolate and vanilla comforting the palate. Light bitterness on the edges in the form of dark chocolate and very mild roast with light notes of soy throughout. Vanilla is neither artificial flavored nor overdone. Low carbonation yet tight with pretty good attenuation. There are definitely points where I feel the sweetness quite a lot, but it's very reasonable for its size and never syrupy or cloying. The chocolate, fudge and vanilla flavors are excellent and the light soy-like oxidation is interesting, though probably not intended. Could do with a bit more vinous character and bitterness, but it's pretty nicely balanced as is. No alcohol even with warming. Clean.

Pours black into a tulip. Mocha head with medium retention recedes to hug rim. Vanilla, chocolate and espresso aromas. Soft with soy, hot chocalate upfront turning to warm vanilla
