High gravity black ale brewed with Ty Ty honey, copious amounts of hops and aged on toasted Spanish Cedar.

Part 2 of a 4 beer collaboration between Cigar City, Hill Farmstead, and Grassroots.

A note from Joey Redner: "The beers are basically black IPA’s brewed with lots of Citra, Mt. Rainier and Simcoe along with Ty Ty honey from North Florida aged on medium toast Spanish Cedar. There are different hop additions in the Hill Farmstead/Grassroots version (Or) and the 2-row base malt in the CCB version (Either) is replaced with Pilsner malt in the Vermont/Denmark version (Or). There are also some process differences which is one of the purposes of a collaboration; allowing breweries to learn from each other.

The goal was to make two beers that were alike, but slightly different due to preferences in regional approach and access to ingredients. The four beers in this collaborative series will be named:

Either, Or, Neither and Nor. Either and Or will release first and the other two will follow. Both Either and Or were brewed at CCB, but Neither and Nor will be brewed as single batches in both Vermont and Denmark.

Backlog September 2011. Dark brown, close to black body under a fading beige head. Strong aroma of dark malt, soy, American hops and citric fruits. Taste is sweet malt, some roasted malt, citric fruits and bitter hops and quite alcoholic. Fine body with sweet, bitter and boozy aftertaste. Really nice start here, but the high alcohol make it feels a bit too muchfor me.

Bottle Almost black and opague. Malt and especially honey in the aroma. Malty sweet flavor with roast, hints of ash, honey and woody notes. Alcoholic. Roasty, honeyish aftertaste with loads of hops and dried red fruit.

Back from the dead bottle - thanks to Kenny. Shared at L42. It pours darkest brown - black with a small beige head. The aroma is soft, smooth, juicy, fruity, oily, cocoa, toasty malts and rock road. The taste is rich roasty action, bitter - sweet, oily, filthy, slick, earthy, rock road, cocoa, charred pine, boozy alcohol kick and wood with a slick, toasty finish. Medium body and fine carbonation. Decent stuff.

Bottle shared on Level 42, 14/11/2017. Many thanks to Kwnny for this one. A mahogany brown coloured pour with a loos etan head. Aroma is woody malts, pine, cedar, little chocolates. Palate ismedium sweet, sticky, moderate carbonation. Flavour is composed of woody bark, chocoalate, earthy and pine. . Palate is medium full, moderate carbonation. , nutty.

Collaboration between three breweries, identical to their Either, but with other regional malts and hops. The result is visually the same, but aroma and taste clearly tend more to fruitiness, less dry, more honeyish and chocolatey and in all, rounder and ’friendlier’; hops still govern the finish with a firm hand, strong and long-lasting. Fantastic brew, I liked this even more than the Either, already a very good and fascinating brew in itself.

Bottle shared by oRos. Pours dark brown with a tan head. Aroma is a bit of pine, with chocolate and dark malt. Med body. Flavor is lightly minty chocolate with dark malt.

Bottle shared at Ma Che in Rome. Pours black-brown with a foamy tan head. Burnt cedar wood on the nose with darkened grapes as well. Medium sweet flavor with lightly jammy dark fruits, light chocolate, grape jelly, mellow dry cedar wood. Medium bodied with fine, creamy carbonation. Light warmth to finish with a bit of bitter baking cocoa, earth, ripe and sweet berries. Lovely. Great depth of character.
