We continue our experiments with vast universe of wild yeast and wood. Amalgam means mix, blend, fusion or alloy. And it's a perfect name for this beer which is a blend of wheat and rye beers transformed by work of tiny beasts (well, mushrooms, but it's details). More than half a year they works their way through this mix and changed the profile into a bone dry burst of tart apples, citrus (is it grapefruit notes? orange? tangerine? decide yourself) and pleasant glowing warmth. Deconstructed versions of wheat and rye are to follow. Time in the barrel (red wine): 8 month.

Bottle @ Home. Pours clear golden with a white head. Aroma of malt, sourness, yeast, funk, light caramel, fruit, wet wood. Flavor is sweet, lightly sour, malt, yeast, funk, litttle caramel, wood, fruit, light vinegar. Medium body, average carbonation, dry and light acidic finish. 080621

[ As Varvar Amalgam ].
ABV: 7.5%. Clear medium yellow colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, wheat, barnyard, leather, fynk, sour grapes - sour apples. Flavor is moderate sweet with a average duration, sour - tart, funky, grapes, apples, wet wood - oak, light umami feel. Body is medium, texture is oily to watery, carbonation is soft. [20210605]

Bottle @Last Højbjerg Tasting in Højbjerg. Clear golden, white head. Sour berry aroma, a little funk, a little solvent. Sour flavour, some berries, sweet fruit, again a little solvent in a very nice way.

Creamy white good mostly lasting head. Yellow colour. Light malty and hopy nice acetic aroma. Moderate bitter nice acetic flavor. Average finish. Oily palate.

Bottle @ Højbjerg tasting. Nice head with good duration. Color is golden. Aroma and taste are funk, lactose acid, fruits, citrus and malt. Nice sour finish.

Bottle @ Saxo tasting. Hazy golden with a white head. Aroma is sweet, malty, fruity and barnyard. Flavor is quite sweet and light acidic. Dry and light acidic finish. 050621

Bottle. Color: Slightly hazy pale golden, thin white head. Aroma: Tart, funky, fruity tart apricots. Taste: Over moderate tart, moderate sweet, funky notes, fruity notes of red wine and subtle tangerine, orange and apricot. Wood, quite a lot of tannins. Hints of vinegar. Dry-ish mouthfeel. Quite nice.
