Cucunera is a low fermentation beer, strong and well structured: To produce it we follow the guidelines for Bock in Germany allowing only some hop variants in order to give it personality. Success was accomplished by the using of very soft water and in decoction mashing. Together, these two parameters give a round body, full but not heavy, streamlined by good acidity that will improve drinking. The olfactory sensations are dominated by hints of fruit and hops well supported by intense malt flavors. In the mouth the beer is warm, well-attenuated and not cloying: a major hop balance the sweetness of malt and makes its way into the final giving a bitter cleaned that dries well the mouth and draws another sip.
