Our stock ale is brewed and aged in the tradition of the great English and American barleywines brewed with floor-malted Maris Otter, Munich, and a blend of Crystal malts, and hopped with Amarillo and Centennial. Deadfall was fermented with our house ale strain and then aged for six months in a Westland whiskey barrel which had previously held American bourbon. The barrel character is more akin to scotch than American whiskey, and the extended aging has enhanced the malt, hop, and yeast characters without overwhelming them. The fruity yeast and hops meld with the sweet malt character and notes of vanilla spice, and citrus of the cask, creating a complex array of caramel and bruleed sugar flavors, with an aroma of candied oranges.

500mL bottle, pours a deep dark mahogany with a small beige head. Aroma reveals an earthy bourbon barrel character upfront, followed by dried dark fruit, and bready toffee. Flavour is loaded with raisins and other dark dried fruit, followed by rich bourbon barrels, tons of wood, alcohol, and treacly toffee. Wonderful barrel character here, with a finish of bourbon, dark dried fruits, and toffee. Lovely beer.

Draft 7 oz pour at Holy Mountain. A dark and dense chocolate brown pour with a thin cream tan head. A rich bran aroma with raisins, brown sugar, and chocolate. Flavor is smooth, rich chocolate, toasty malt, bran, raisins, plums, a mellow vanilla finish. Creme Brulee. The best possible dessert beer. Delicious, smooth, complex, well designed. Amazing beer.
